Simple Food cooked Simply! A Peas Braised with Onions and Parma Ham Recipe by Rick Stein.

Mediterranean Escapes is one of my favourite cooking shows. Everything is comfort food at its best.
This Peas Recipe braised with Onions and Parma Ham is no exception and makes for a perfect weekend lunch or dinner.
Rick is using baby onions in his recipe, we have substituted those with shallots but you can use whatever takes your fancy!

Serve with some crusty bread and a few blocks of Parmasan Cheese!

Serves: 6 Preparation:10 min Cooking:12 min

Ingredients:

Peas 750 g
Shallots 20
Parma Ham 200 g
Olive Oil
Salt
Pepper
Parsley

Method:

  1. Peel the shallots or baby onions
  2. Slice the garlic cloves, you can use more than two if you wish
  3. Dice the Parma Ham
  4. Chop up the parsley
Cooking
  1. Heat up a few glugs of olive oil
  2. Add the onions / shallots and saute for a couple of minutes
  3. Pour in a little water, cover and leave to stew and soften or a little while
  4. Add the Parma Ham
  5. Add the garlic
  6. Cook for a minute or so
  7. Pour in the peas
  8. If it looks a little dry add a little more water
  9. Season with salt & pepper
Garnish with parsley
