I’m sure I’ve mentioned this before but simple food cooked simply always delivers the best results. Getting the basics to a good pasta right is so important and will open many more culinary doors.

Ingredients:
Aubergines | 1 | ||
Olive Oil | |||
Garlic Clove | 1 | ||
Chilli Flakes | 1 | teaspoon | |
Chopped Tomatoes | 400 | g | |
Salt & Pepper | |||
Feta Cheese | |||
Fresh Basil | 1 | handful | |
Spaghetti |
Method:
1 . Slice the aubergines, season with salt and leave to dry for 30 minutes in a tea cloth
2 . Chop & crush the garlic in salt
3 . Cook the spaghetti as per the packet instructions
4 . Heat up the olive oil in a hot pan
5 . Add the aubergines cook for about 3 minutes
6 . In the same oil place in the garlic
7 . Add the chilli flakes & chopped tomatoes
8 . Then add back the aubergines
9 . Crumble in the feta or your own choice
