A Braai Recipe of note from Jamie Purviance and Weber, a Roast Tri Tip Sirloin Steak Braai Recipe with a Cumin & Paprika Marinade and Pear, Radicchio & Blue Cheese Salad.
The Tri Tip is the lower portion of the sirloin and is usually used for mince meat.
You can use this marinade on almost any steak braai and naturally the braai salad too.
When it comes to braaing large cuts of meat like this it is important to set up the braai for direct and indirect heat so that you can manage the temperature and gently coax your steak to the appropriate doneness without over or under cooking the meat.
|Tri-tip roast / Bottom Sirloin||1.2||kg|
|For the Marinade:|
|Ground All Spice||1||teaspoon|
|For the Radicchio, Blue Cheese Salad|
For the Steak Marinade:
1 . Mix together all the marinade ingredients
2 . Coat the steak with the marinade
3 . Allow to rest for 1 hour at room temperature
Braai the Steak:
1 . Set the braai up for direct and indirect cooking
2 . Sear the steak over a medium direct heat for 4-5 minutes each way with the lid on
3 . Move the steak across to the indirect heat and cook for 15-20 minutes for medium rare
4 . Remove and rest for 10 minutes
5 . Slice across the grain into thing slices for serving
For the Radicchio and Blue Cheese and Almond Salad:
1 . Whisk the vinegar, oil, salt, and pepper for the vinaigrette
2 . in a large bowl mix together the radicchio and lettuce, drizzle with half the vinaigrette
3 . Top of salad with pear slices, blue cheese, and almonds.
4 . Drizzle with the remaining vinaigrette before serving
