A Snoek Recipe with a traditional Apricot Basting.
Snoek is practically a staple in the Western Cape where commercial snoek fishermen head out to sea on a regular basis as they earn their living.
This is a very easy Snoek Braai Recipe to make with a simple apricot basting sauce.

Snoek Braai Recipe with Apricot Basting,

Ingredients:
Snoek | 1 | whole | butterflied |
Apricot Jam | 1/2 | cup | |
Lemons | 2 | juice of 1 | |
Onion | 1 | chopped | |
Butter | 50 | g | |
Oil | 2 | tablespoons | |
Thyme | 2 | tablespoons | |
Dry Chilli Flakes | 1 | teaspoon | |
Garlic | 1 | teaspoon | crushed |
Method:
1 . Heat up the butter
2 . Saute the onion and thyme until soft and translucent
3 . Add the garlic, chilli flakes, apricot jam and lemon juice (1)
4 . Cook for 2 more minutes on a low heat
5 . Baste the butterflied snoek with the apricot basting sauce
6 . Braai for 2 minutes, turn and baste
7 . Repeat every couple minutes until the snoek is cooked through

Serve with a salad and lemon wedges.
