Peri Peri Chicken is a very easy meal to make, especially if you buy your chicken pre spatchcocked.

Peri Peri Chicken Recipe

Ingredients:
Chicken | 1 | spatchcocked | |
Red Peppers | 2 | roasted | |
Onion | 1 | chopped | |
Chillies | 4-5 | chopped | |
Tomatoes | 2 | chopped | |
Lemon | 1 | juiced | |
Garlic | 1 | teaspoon | chopped |
Oregano | 1 | tablespoon | |
Paprika | 1 | teaspoon | |
Sugar | 1 | teaspoon | |
Oil |
Method:
1 . Roast the peppers over a flame or in the oven
2 . Place in a bowl, cover and allow to sweat for 15 minutes
3 . Peel away the skin
4 . Heat some oil in a pan and saute the red peppers, onion, chillies and tomatoes until soft
5 . Add the garlic, sugar, paprkia, oregano and lemon juice.
6 . Cook for a 2-3 more minutes
7 . Marinade the spatchcocked chicken for 1 hour or overnight if possible
8 . Cook on the braai or in the oven
