A Twenty Cloves of Garlic Roast Chicken Recipe for those who love garlic and those who are having a problem with vampires.
This marinade will work well for both a whole roast chicken and chicken pieces, the drumstick in particular. It’s also a great idea for a chicken braai marinade.
If you feel that twenty cloves of garlic are not enough you could always double up to 40 cloves!
Twenty Clove Garlic Roast Chicken Recipe | Chef John

Ingredients:
Chicken | 1 | ||
Garlic | 20 | cloves | peeled |
Oregano | 1 | teaspoon | dried |
Thyme | 1 | teaspoon | dried |
Rosemary | 1 | teaspoon | dried |
Chilli Flakes | 1/2 | teaspoon | |
Olive Oil | 100 | ml | |
Red Wine Vinegar | 50 | ml | |
Salt & Pepper |
Method:
1 . Blitz the garlic, oregano, thyme, rosemary, chilli flakes in a blender with the olive oil and red wine vinigar
2 . Score the chicken legs
3 . Coat the chicken with the garlic paste (whole or pieces)
4 . Cover and marinade for 2 hours or overnight
5 . Preheat the oven to 180°C
6 . Roast in the oven for between 60-75 minutes depending on the size of the chicken
