Roast Chicken Recipe with Lemon & Coriander | Ina Paarman

Serving: 4-6 | Prep: 15 min | Cooking guideline: 60 min

Ingredients:
For the Rub
Chicken Spice 1 tablespoon
Sugar 1 teaspoon
Lemon Zest 1
Coriander Pesto 1 tablespoon
Olive Oil 2 tablespoons
For the Chicken
Whole Chicken 1
Lemon 0.5
Chicken Spice 0
Sugar 2 teaspoons
Lemon Marinade 125 ml
Boiling Water 180 ml
Liquid Chicken Stock 25 g
Method:

1 . Preheat the oven to 180°C
2 . Butterfly the chicken
3 . Mix all the rub ingredients together
4 . Spread them under the skin
5 . Slice half of the lemon into thin slices
6 . Lay them down in your roasting tray
7 . Sprinkle with sugar
8 . Season the underside of the chicken with chicken spice or salt & pepper
9 . Position the chicken on the lemon slices, skin side up.
10 . Season the top with chicken spice or salt & pepper
11 . Pour the marinade over the chicken
12 . Dissolve the chicken stock in boiling water
13 . Pour it into the roasting tray on the sides, not over the chicken

Roasting
1 . Cover & roast the chicken in the oven for 1 hour
2 . Remove the cover and roast for another 30 minutes
3 . Rest for at least 10 minutes before serving
