Roast Chicken Recipe with Lemon and Coriander | Ina Paarman,

Ingredients:
For the Rub | |||
Chicken Spice | 1 | tablespoon | |
Sugar | 1 | teaspoon | |
Lemon Zest | 1 | ||
Coriander Pesto | 1 | tablespoon | |
Olive Oil | 2 | tablespoons | |
For the Chicken | |||
Whole Chicken | 1 | ||
Lemon | 0.5 | ||
Chicken Spice | 0 | ||
Sugar | 2 | teaspoons | |
Lemon Marinade | 125 | ml | |
Boiling Water | 180 | ml | |
Liquid Chicken Stock | 25 | g |
Method:
1 . Preheat the oven to 180°C
2 . Butterfly the chicken
3 . Mix all the rub ingredients together
4 . Spread them under the skin
5 . Slice half of the lemon into thin slices
6 . Lay them down in your roasting tray
7 . Sprinkle with sugar
8 . Season the underside of the chicken with chicken spice or salt & pepper
9 . Position the chicken on the lemon slices, skin side up.
10 . Season the top with chicken spice or salt & pepper
11 . Pour the marinade over the chicken
12 . Dissolve the chicken stock in boiling water
13 . Pour it into the roasting tray on the sides, not over the chicken
Roasting
1 . Cover & roast the chicken in the oven for 1 hour
2 . Remove the cover and roast for another 30 minutes
3 . Rest for at least 10 minutes before serving
