Aubrey delights us once again but on this occasion there is no singing. Tonight it’s pork chops, mash potato and cabbage which is sounding pretty appealing at the moment.
Aubrey is a man for all seasons.

1 . Slice and dice the potatoes
2 . Finely chop the cabbage
3 . Peel and dice the apples
4 . Peel and chop the onion
5 . Peel & slice the garlic
6 . Chop up the sage
7 . Beat the eggs
1 . Bring a pot of salted water to the boil and add the potatoes (15-20 minutes until tender)
2 . Bring another pot of water to the boil and add the cabbage, simmer on a low-med heat for 5 minutes
3 . Drain the cabbage and leave to rest chucking the apples on top.
4 . Brown the onion & garlic in some oil for 5-7 minutes then add to the resting cabbage
5 . Pour some breadcrumbs onto a flat surface or plate
6 . Season with the sage and some salt & pepper
7 . Coat the pork chops with the seasoned breadcrumbs
8 . Heat a pan with butter and a lug of olive oil
9 . Cook the pork chops until ready
10 . Mash the potatoes adding butter and a few dashes of cream until you reach the right consistency
11 . Reheat the cabbage & onion drizzling with the vinegar and vermouth.
12 . And Serve
