The only reason i can imagine that Gordon called this a veloute is becasue it has the texture of one. Other than that, this is not a veloute which is one of the four mother sauces along with Allemande, Bexhamel & Espagnole. Anyway, this would be great served cold under a blue African sky. Refreshing.
