Treat yourself and the family to this classic American Chocolate Chip Cookie Recipe. These are a quick bake as you want to get a nice chewy centre packed full of brown and white chocolate chips.
Eric uses an Ice Cream scoop to measure out the cookie mixture onto the baking tray.
This recipe is listed as serving 20 biscuits and as you might notice they are quite large so bake about three – four per tray as Eric does in the video.

Ingredients:
Plain Flour | 250 | g | |
Bicarbonate of Soda | 1/2 | teaspoon | |
Salt | 1/2 | teaspoon | |
Unsalted Butter | 130 | g | |
Muscavado Sugar | 200 | g | |
Golden Caster Sugar | 100 | g | |
Vanilla Extract | 2 | teaspoons | |
Egg | 1 | ||
Egg Yolk | 1 | ||
White & Dark Chocolate Chips | 325 | g |
Method:
1 . Preheat the oven to 170°C
2 . Grease baking trays or line with parchment paper
3 . Mix together the two sugars
4 . Add the melted butter and whisk into a thick paste
5 . Add the egg yolk and the egg and mix
6 . Sift in the flour and the bicarb of soda
7 . Add the salt
8 . Beat and add the vanilla extract
9 . Add the chocolate chips
10 . Use an ice cream scoop to scoop the mixture onto the baking tray
11 . Bake in the oven at 170°C for 12-15 minutes
