Spinach Rice Pilaf (Spanakorizo) Recipe | Diane Kochilas

Ingredients:
Olive Oil | 60 | ml | |
Onion | 1 | chopped | |
Garlic Clove | 1 | chopped | |
Long Grain Rice | 1 | cup | |
Spinach | 500 | g | |
Water | 600 | ml | |
Fresh Dill | 1/2 | cup | chopped |
Ground Cumin | 1/2 | teaspoon | |
Salt & Pepper | |||
Lemons | 2 | ||
Red Wine Vinegar | 15 | ml | |
Feta Cheese |
Method:
1 . Heat some oil in a pan on medium heat
2 . Sauté the onions until soft
3 . Add the garlic and stir
4 . Add the rice and stir over a medium to high heat
5 . After a couple of minutes add the spinach
6 . Allow the spinach to wilt before adding a little water
7 . Add the dill
8 . Season with salt & pepper
9 . Add the cumin
10 . Pour in the juice of 2 lemons
11 . Cover and cook for 5-6 minutes until all the liquid has gone
12 . Serve hot or cold, with a lemon wedge, fresh dill and a drizzle of olive oil
