An easy Roast Chicken Recipe with Rosemary & Roast Potatoes plus how to roast garlic.
Chickens are very easy to roast and almost any variety of herbs can be used to bring some flavour to the dish. Rosemary is one of the more popular and in this recipe a great way to add even more is to roast two garlic bulbs wrapped in some foil.
Once done squeeze the garlic out over the chicken and the potatoes.

Ingredients:
Whole Chicken | 1 | ||
Onion | 1 | ||
Rosemary | 2 | sprigs | bruised |
Potatoes | 6 | halved | |
Olive Oil | |||
Salt | |||
Pepper | |||
Garlic | 2 | bulbs |
Method:
1 . Preheat the oven to 230°C
2 . Place the chicken in the roasting tray
3 . Halve the onion and place around the chicken
4 . Bruise the rosemary and place on either side of the chicken
5 . Halve the potatoes and place around the chicken
6 . Chop the celery, leeks, onion and carrots into chunky pieces
7 . Drizzle with olive oil
8 . Season with salt & pepper
9 . Slice the tops off the garlic bulbs and wrap in foil
10 . Place in the roasting tray
For Roasting
1 . Place the chicken and potatoes in the oven for 15 minutes
2 . Remove and baste with the juices, turning the potatoes
3 . Reduce the heat to 190°C]
4 . Return to the oven and roast for approximately 45 minutes, basting occasionally.
5 . When the juices run clear it will be ready
6 . Unwrap the garlic bulbs and squeeze out the garlic
7 . Allow the chicken to rest for 15-20 minutes before serving.
