Aubrey shares not just his cooking talents but a little of his singing talents too while making this delightfully simple & delicious pasta recipe.
Take note that his love of wine was not just for Come Dine With Me but certainly an entrenched affair that has no doubt been going on for a very long time.
I do however disagree with Aubrey on one point regarding his recipe. By adding oil to the pasta while boiling you not only prevent it from sticking in the pot but you prevent the sauce from sticking properly to the pasta which is what you really want to happen. No need to waste oil in the pot, it’s an urban myth. Simply stir it a couple of times while cooking and it will be perfect.
You do want lots of salt however, so much that you can taste the salt in the water. That’s no myth, just the best way to prepare pasta.

Onion | 1 | ||
Garlic | 1 | ||
Unsalted Butter | 1 | knob | |
Olive Oil | |||
Sun Dried Tomatoes | 1 | handful | |
Black Olives, Stoned | few | ||
Chilli Flakes | |||
Basil | |||
Parmesan Cheese |
1 . Chop the onion
2 . Chop up the sun dried tomatoes
3 . Stone the olives if not pre-stoned and chop
4 . Grate the garlic
Cooking:
1 . Cook the pasta according to the packet instructions
2 . Melt the butter in a pan
3 . Add some olive oil to prevent it from burning
4 . Chuck in the onions, sauté until soft
5 . Add the garlic
6 . Add the sun dried tomatoes
7 . Add the olives
8 . Just before it’s ready sprinkle with a few chilli flakes
9 . Season with salt & pepper
10 . Transfer the pasta to the sauce and mix together
11 . Add some basil
12 . And serve
