Are you always on the look out for a great way to roast potatoes?
Here is one from Michel Roux Jr, who made a guest appearance on the South African edition of MasterChef earlier this year.
Michel is using goose fat for his roast potato recipe as this sits alongside his Roast Goose Recipe.
If you do not have any available you can’t go wrong with duck fat as a substitute.
Michel also recommends not touching the potatoes while they are roasting if you want them to be golden and crispy when done.
Roast Potato Recipe with Goose Fat | Michel Roux Jr
Serving: 12 | Prep: 15 min | Cooking: 45 min
Ingredients:
Potatoes | 6 | kg’s | |
Goose Fat | or duck fat |
Method:
Preheat the oven to 200°C
1 . Peel the potatoes and cut them in half
2 . Parboil for 10 minutes
3 . Pat dry and allow all the steam to dissipate
4 . Pour the goose fat into the roasting tray and drop in the potatoes
5 . Roast in the oven for 45 minutes
6 . Return to room temperature for 30 – 45 minutes
