Wild Boar Kidney Turbigo Recipe | Peter Gott

Before Turkey it was the Feast of Royals, Wild Boar that took centre stage at Christmas time.

This is a classic example of simple food cooked simply. the best and only way to do it.

Wild Boar Stew Kidney Turbigo Recipe | Peter Gott

Serving: 4 | Prep: 10 min | Cooking: 25 min

Ingredients:
Butter a knob
Pig Kidneys 8
Wild Boar Sausages 225 g
Onion 1 chopped
Mushrooms 150 g sliced
Worcestershire Sauce few splashes
Dry Sherry 150 ml
Tomato Paste 1 tablespoon
Hot English Mustard Powder 1 teaspoon
Chicken Stock 200 ml
Cornflour 1 teaspoon
Crusty Bread
Parsley a handful chopped
Salt & Pepper
Method:

1 . Skin and core the kidneys
2 . Slice length ways
3 . Heat the butter in the pan
4 . Brown the kidneys and the sausages then remove the kidneys from the pan and set aside
5 . Sauté the onions and mushrooms with the sausage
6 . Pour in the Sherry
7 . Pour in a few splashes of Worcestershire Sauce
8 . Add the tomato paste
9 . Add the Hot English Mustard Powder, not too much.
10 . Pour in the chicken stock and bring to a simmer
11 . Chop up the kidneys and return to the pan to finish cooking
12 . Taste and season wit salt & pepper
13 . Add a teaspoon or two of cornflour to thicken up the sauce.
14 . Serve with crusty bread and garnish with parsley.
