Spicy Brined Spit Roast Chicken Braai Recipe with Coriander & Jalapeño Stuffing,

Ingredients:

Green Chillies | 4 | ||
Garlic Clove | 1 | ||
Onion | 1 | ||
Black Pepper | |||
For The Rub | |||
Olive Oil | 1 | tablespoon | |
Red Chillies | 2 | ||
Cumin | 1 | tablespoon | |
Onion Powder | 2 | tablespoons | |
Garlic Powder | 1 | tablespoon | |
Coriander | |||
Salt | |||
For The Stuffing | |||
Stale Bread | 2 | ||
Coriander | |||
Red Pepper | 1/4 | ||
Tomato | 1/2 | ||
Onion | |||
Pickled Jalapeños | 2 | tablespoons | |
Jalapeño Juice | |||
Unsalted Butter |
Method:
For the Brine
1 . You are going to need to soak the chicken for 5 hours in brine so leave yourself enough time
2 . Place the brine ingredients, the green chillies, garlic clove & onion in a blender and blitz
3 . Using enough fridge temperature water in a bowl to cover the chicken add two tablespoons of salt & sugar for every liter of water.
4 . Stir in the blended paste ingredients
5 . Make sure the salt & sugar is dissolved
6 . Add the chicken and keep in the fridge to brine
For the Stuffing
1 . Blitz the bread & the coriander
2 . Finely chop up red pepper, tomato (de-seed), onion, jalapeños and add the to the breadcrumbs
3 . Mix it all together
4 . Add a little bit of the jalapeño juice to make a little paste
For the Rub
1 . Blitz the rub ingredients, red chillies, cumin, onion powder, garlic powder, coriander and a little salt
Back to the Chicken
1 . Insert the stuffing into the cavity and add a little bit of butter
2 . Apply the rub to the chicken
3 . Mount it on the spit, locking it in place
4 . Cook on the braai until done
