Pear, Blue Cheese & Caramelised Walnut Tart Recipe | Caro de Waal,

Ingredients:
Onion | 1 | sliced | |
Butter | 2 | knobs | unsalted |
Puff Pastry | 400 | g | |
Blue Cheese | 100 | g | |
Pears | 4 | cored, peeled & sliced | |
Brown Sugar | 3 | tablespoon | |
For the Caramelised Walnuts | |||
Brown Sugar | 3 | tablespoons | |
Butter | 2 | knobs | unsalted |
Walnuts | 100 | g | |
Greens | 1 | for garnish |
Method:
For the onions
1 . Sauté the onions in the butter until soft & translucent
For the pastry
1 . Cut out two rounds of pastry
2 . In one of the rounds make a circular indentation about 1cm from the edge.
3 . Place the pastry with the indentation on top of the other.
4 . Brush with egg wash
5 . Pop in the oven at 180°C until golden
For the pears
1 . Core, peel and slice the pears and cook in a pan with the brown sugar and butter until lightly caramelized and soft.
To caramelise the walnuts
1 . Heat up the butter and sugar in a pan
2 . Add the walnuts and caramelise
3 . Remove and allow to cool
To assemble
1 . Scoop out the centre of the top layer of the puff pastry
2 . Layer the onions, caramelised pears and blue cheese
3 . Place in the oven at 150°C until the cheese melts
4 . Garnish the tart with the walnuts and baby greens
