Roasted Banana Muffin Recipe with Dark Rum | Eric Lanlard,

Ingredients:
For the Roasted Bananas | |||
Bananas | 4 | ||
Muscovado Sugar | 100 | g | |
Vanilla Paste | 2 | teaspoons | |
Ground Cinnamon | 2 | ||
Dark Rum (optional) | 4 | teaspoons | |
For the Muffin Batter | |||
Milk | 250 | ml | |
Eggs | 4 | ||
Melted Unsalted Butter | 170 | g | |
Self Raising Flour | 500 | g | |
Baking Powder | 2 | teaspoons | |
Golden Caster Sugar | 250 | g |
Method:
1 . Preheat the oven to 180°C
2 . Peel and halve the bananas and lay them out on some tin foil
3 . Coat the bananas with the Muscovado Sugar, Vanilla Paste, Ground Cinnamon and finally if there are no kids around some Dark Rum
5 . Coat the bananas well
6 . Close the foil and roast for 10 – 15 minutes in the oven, you will smell the aroma when its ready
For the batter
8 . Beat the milk and four eggs together
9 . Add the melted unsalted butter and keep whisking while you do
10 . Sift the flour and baking powder together
11 . Add the roasted bananas to the flour
12 . Add the caster sugar
13 . Mash everything together and beat
14 . Beat the mixture while slowly pouring in the melted butter and milk
15 . Fill a piping bag and pipe into the cases to 3/4 fill
16 . Top off with banana chips and a sprinkling of caster sugar
17 . Bake in the oven at 180°C for 25-30 minutes
18 . Dust with icing sugar before serving
