Chocolate Soufflé & Orange Vodka | Aubrey Ngcungama,
Serving: 6-8 | Prep: 45 min | Cooking: 20 min
Ingredients:
Unsalted Butter | 100 | g | |
Caster Sugar | 150 | g | |
Dark Chocolate | 450 | g | |
Egg Whites | 10 | ||
Egg Yolks | 2 | ||
Corn Flour | 15 | g | |
Cream | 250 | ml | |
Vodka | 250 | ml | |
Orange | 1 | ||
Ice Cream |
Method:
1 . Grease the ramekins with some butter, not the one in the ingredients list but a little extra
2 . Use 75g of the caster sugar to coat the ramekins with
3 . Bring some water to the boil in a pan
4 . Break up the chocolate into pieces and drop into a bowl
5 . Place the bowl of chocolate pieces over the water, reducing it to a simmer
6 . Melt the butter in a pan over a low heat, add corn flour and stir
7 . Add the cream to the pan and stir until it begins to take on a silky texture, about 1 1/2 minutes
8 . Remove from the heat, set aside and allow to cool
9 . Separate the egg whites and whisk until the peak. Add 25g of caster sugar and whisk, repeat the process 2 more times.
10 . It should take approximately 5 minutes to get the whites well fluffed.
11 . When the four & cream has cooled add the egg yolks and stir
12 . The add the chocolate and stir
13 . Transfer a little of the egg white mixture to the chocolate and stir
14 . Now pour all the chocolate into the bowl with the egg whites and fold gently keeping it fluffy
15 . Pour into the ramekins
For the Orange Vodka
1 . Zest 1 orange into the vodka
2 . Chill in the fridge for 3 hours
