<p>Here is a very new way for you to cook salmon, on a board of cedar wood in the oven. Just the thought of it makes my nostrils twitch trying to pick up the scent.</p>
<p>You can also use the planks for cooing fish or meat on a braai, just use an indirect method of cooking.</p>
<p>If you can&#8217;t get hold of cedar you can use oak or any other option you can find. One that has been used to age wine in would be very handy.</p>
<p>If you cannot find any planks the maple glaze will still come in very handy.</p>

1	.	Pour the maple syrup into a pan<br />
2	.	Add the chopped ginger, lemon juice, soya sauce and chopped garlic cloves.<br />
3	.	Reduce for 20 min on low heat, simmer<br />
4	.	Put your cedar board in the oven for 15 minutes with some oil spread over it to toast.<br />
5	.	Slice the spring onions diagonally<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Sprinkle the spring onions on the toasted cedar board and place the salmon on top, skin side down<br />
2	.	Brush the glaze onto the surface of the salmon<br />
3	.	Pop into the centre of the oven an cook for 30 min at 180C<br />

<p>First up you can do this for practically any meat that you are braaing, be it lamb or beef. You can also play with the herbs that you use for the smoking process.</p>
<p>You will need a Loin Rack to keep the meat of the hot grill as all you want to do for the first 10 minutes of cooking is to smoke the meat. For the seasoning &amp; marinade you can choose your favourites which might well be Ina Paarman.</p>

1 . Cut a couple of slits into the fat to stop them from curling<br />
2 . Season with your favourite seasoning<br />
3 . Drizzle with olive oil<br />
4 . Let the chops rest for 30 minutes before cooking</span></span><br /><strong> Cooking: </strong><br />
1 . Place a pan over the coals to create a coal free zone<br />
2 . Using a loin rack place the chops on the grill over the coal free zone<br />
3 . Add the large bunches of rosemary<br />
4 . Put the lid on and smoke for 10 minutes<br />
5 . Once smoked, remove from the loin rack, the pan from the coals and braai as per normal<br />
6 . Apply your favourite marinade/basting<br />
7 . Cook until done</p>

		</p><p>This Peruvian Ceviche is very quick and easy to make and you can use any firm white flesh fish, we are using Angelfish.</p>
<p>You can marinade the Angelfish overnight which is perfect if you are entertaining and want to get as much done the day before as possible.</p>
<p>This is a great light lunch or starter and would be perfect for a braai day too, especially if the braai is red meat all the way.</p>
<p>Angelfish are on the SASSI Green List, other options include Gurnard or Hake.</p>

	<strong>	For the fish:	</strong><br />
1	.	Clean the fish, if whole and fillet.<br />
2	.	Cut into cubes and place in a bowl<br />
	<br /><strong>	For the marinade:	</strong><br />
1	.	Grate half the garlic clove and a little bit of ginger (small quantities)<br />
2	.	Chop up some chillies, the quantity is up to you.<br />
3	.	Mix the ginger, garlic and chillies together<br />
4	.	Slice the onions, very thin and place them in a bowl of water.<br />
5	.	Peel and boil the sweet potato<br />
	<br /><strong>	Putting it together:	</strong><br />
1	.	Salt the fish, add the onions, ginger, garlic and chilli.<br />
2	.	Pour over the lime juice and leave to marinade for 15 minutes or longer, even overnight<br />
	<br /><strong>	Plating up:	</strong><br />
1	.	Serve with slices of sweet potato, lettuce, some extra chillies	and a sprinkling of coriander.<br />

	<strong>	For the Crab Mash	</strong><br />
1	.	Pour a little oil in a pan<br />
2	.	Add the peeled &#038; par boiled potatoes and heat them up<br />
3	.	Remove and crush gently with a fork to absorb the olive oil<br />
4	.	Chop and add the spring onions<br />
5	.	Add the crab meat<br />
6	.	Mix it all together<br />
7	.	Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)<br />
8	.	Add some freshly chopped coriander<br />
9	.	Mix together<br />
	<br /><strong>	For the Crispy Trout</strong><br />
1	.	Roll the trout fillets up and score/slice into the meat through the skin<br />
2	.	Season with salt &#038; pepper and stuff with fresh thyme or basil<br />
3	.	Heat the oil and when it begins to smoke, add the salmon<br />
4	.	Leave and turn once<br />

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1 . Preheat the oven to 200°C<br />
2 . Peel and dice the potatoes into 1 cm cubes<br />
3 . Place the potatoes in a pot of water, bring to the boil and cook for 3 minutes.<br />
4 . Drain the potatoes and set aside<br />
5 . Heat some oil in a frying pan<br />
6 . Fry the chorizo for 2 minutes or until crispy and golden<br />
7 . Remove and set aside, leaving the oil in the pan<br />
8 . Sprinkle the hake with paprika<br />
9 . Place in the pan with the hot chorizo oil<br />
10 . Cook for 1 minutes each way or until golden<br />
11 . Transfer the hake to a roasting tray and cook in the oven for 10 minutes<br />
12 . Heat a little oil in the frying pan<br />
13 . Add the potatoes to the frying pan until crisp<br />
14 . Add the chorizo and mix together<br />
15 . Ready to serve.</p>

<p>The event was attended by some of Gautengs top foodies including the published <a rel="nofollow" href="http://afoodieliveshere.co.za/" target="_blank">Sarah Graham, A Foodie Lives Here</a> and <a rel="nofollow" href="http://simply-delicious.co.za/" target="_blank">Alida Ryder, Simply Delicious</a>. Stefan had made the journey up from Cape Town along with Caro de Waal, editor of Food 24 and my fellow Dinner Divas Judge.</p>
<p>Stefan kicked off the evening with a demo of this recipe before the foodies set about preparing a 3 course meal which was to be judged by Stefan, Caro and Jannine Basson of SASSI.</p>
<p>Despite your&#8217;s truly scoring 4/5 for his trout starter Stefan&#8217;s dish was still the best of the evening for two simple reasons.<br />
1. It only takes about 12 minutes to make.<br />
2. It&#8217;s delicious.</p>

1 . Heat up some oil on a medium heat<br />
2 . Season the fish with salt &amp; pepper<br />
3 . Season the flour with a little salt &amp; pepper<br />
4 . Coat the hake fillets in the flour and dust off any excess<br />
5 . Add the fish to the pan, cook for 1 minute and turn<br />
6 . De-glaze the pan with white wine<br />
7 . Pour in the cream<br />
8 . When the cream begins to bubble add the par boiled new potatoes and peas<br />
9 . Cook for another couple of minutes<br />
10 . Add the mint, the cos lettuce and butter<br />
11 . Squeeze in some lemon juice and serve</span></span>&nbsp;</p>

1	.	Heat up the butter<br />
2	.	Saute the onion and thyme until soft and translucent<br />
3	.	Add the  garlic, chilli flakes, apricot jam and lemon juice (1)<br />
4	.	Cook for 2 more minutes on a low heat<br />
5	.	Baste the butterflied snoek with the apricot basting sauce<br />
6	.	Braai for 2 minutes, turn and baste<br />
7	.	Repeat every couple minutes until the snoek is cooked through</p>
<p>Serve with a salad and lemon wedges.<br />

<p>There is not much to beat a family sitting around the table on Sunday afternoon tucking into a large cut of <strong>Roast Beef</strong>. In this instance the recipe is using a healthy wing rib with plenty of meat to go around.</p>

	<strong>	For the Roast Beef	</strong><br />
1	.	Preheat the oven to 220C<br />
2	.	Weigh the beef to calculate the cooking time. Rare &#8211; 12min per 500g; Medium &#8211; 18min per 500g; Well Done &#8211; 25 min per 500g<br />
3	.	Remove the thyme leaves from the stalk<br />
4	.	Scatter a few into the base of the roasting tray<br />
5	.	Place the roast beef on top with the fat side up<br />
6	.	Season the roast beef with salt, pepper and the remaining thyme<br />
7	.	Roast in the oven at 220C for 15 minutes<br />
8	.	Reduce temperature to 180C and cook for calculated cooking time.<br />
9	.	Remove and rest for 30 minutes<br />
	<br /><strong>	For the Jus	</strong><br />
1	.	Add the wine to the roasting juices<br />
2	.	Bring to a boil on the stove top<br />
3	.	Reduce<br />
	<br /><strong>	For the Horseradish Relish	</strong><br />
1	.	Chop up the onions<br />
2	.	Crumble the walnuts<br />
3	.	Crush the green peppercorns<br />
4	.	Finely chop the parsley<br />
5	.	In a bowl mix together the horseradish sauce, creme fraiche, onions, walnuts, peppercorns and parsley.<br />
6	.	Spoon into a serving dish, cover and refrigerate<br />
7	.	Best served with roast potatoes and Yorkshire Pudding.<br />

1	.	Preheat the oven to 190C<br />
2	.	Season the chicken thigh fillets<br />
3	.	Heat a little olive oil in a pan<br />
4	.	Brown the chicken on both sides<br />
5	.	Transfer to a baking dish (grease it first with a little butter)<br />
6	.	Slice the tomatoes in half and place on top of the chicken thigh fillets<br />
7	.	In a bowl mix together the breadcrumbs, oregano, Grana Padano and a little seasoning<br />
8	.	Scatter the breadcrumb mixture over the top of the tomatoes<br />
9	.	Place in the preheated oven (190C) and bake for 45-50 minutes<br />

<p>Cape Malay recipes hold a proud position in South Africa&#8217;s culinary repertoire. They have enabled South African cooking to infuse Asian styles and ingredients into it&#8217;s own as it creates and defines its own cooking style. A country&#8217;s culinary identity should reflect the identity of its people and in one that is as diverse as South Africa this makes for an exciting array of dishes that bring together traditional African recipes with those that have migrated to the country over the centuries. It has brought together Asian, French, British, Portuguese and Greek to name but a few.</p>
<p>The origin of Cape Malay cooking in South Africa dates back to the days when the Dutch had control of present day Cape Town and the surrounding area. The earliest arrivals where from the Dutch held colonies in modern day Malaysia and Indonesia. Many of the immigrants were political and religious dissidents of Dutch rule in the region and sent into exile as slaves to the Cape. Many of South Africa&#8217;s traditional dishes and recipes were born out of the Cape Malay arrival in South Africa, bredie, bobotie, sosaties, koeksisters and the Cape Malay Curry to name but a few.</p>
<p>As with all recipes when it comes to the heat, use what your family can handle so manage your own recipe quantities when adding the chilli. You can also switch out the chicken for another substitute be it meat or seafood.</p>

1	.	Mix together the masala, flour, salt &#038; pepper.<br />
2	.	Dust the chicken breasts with the flour<br />
3	.	Slice the onions<br />
4	.	Crush the garlic<br />
5	.	Chop the chillies<br />
6	.	Chop the coriander<br />
7	.	Chop the tomatoes<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Heat the oil and butter in a pan<br />
2	.	Brown the chicken breasts<br />
3	.	Remove and set aside<br />
4	.	Cook the onions, cumin seeds, fennel seeds and bay leaf for about 5 minutes on medium-low heat until the onions are soft.<br />
5	.	Add the tomatoes<br />
6	.	Add the masala,turmeric, garlic, chillies<br />
7	.	Cook until thick<br />
8	.	Add the chicken back into the pan and simmer until the chicken is cooked<br />
9	.	Just before it is ready add the yoghurt<br />
10	.	Garnish with coriander for serving<br />

		</p><p>A fresh new face has appeared on our screens in the shape of Clara Bubenzer from the &#8220;Beautiful Food Eatery&#8221; in Cape Town. Clara presents us with this very simple yet very healthy hake recipe to keep you ticking over during the week.</p>

<p>They are joined by Dr. Luke who has a wonderful dieting trick, eat your food off smaller plates. Your mind is a very powerful tool and as you finish your meal your mind will recognise that the plate is now empty and as such it logically follows that you must be full. Its all very Vulcan to me.</p>
<p>If you want to take this a step further we recommend you follow Lord Alan Sugar&#8217;s advice and in addition to the smaller plate, eat your meal with a small fork. He claims this has worked for him in losing the extra pounds so by combining the two techniques together you should be waif like in no time at all.</p>

<li>Crush the garlic</li>
<li>Chop the parsley</li>
<li>Zest the lemon</li>
<li>Mix together in a bowl with olive oil</li>
<li>Season with salt &amp; pepper</li>
<li>Peel &amp; quarter the potatoes</li>
<li>Chop the chives</li>
</ol>
<p><strong>Cooking:</strong></p>
<ol>
<li>Preheat the oven to 220C</li>
<li>Boil the potatoes for 15-20 minutes until tender</li>
<li>When done mash with a little butter, salt and mix in the chives</li>
<li>Lay the hake fillets in a baking dish</li>
<li>Spread the garlic, lemon zest &amp; parsley mix over the fish</li>
<li>Bake in the oven for 10 minutes</li>
</ol>
<p>Serve with the mash and greens of your choice</p></div>

		</p><p>Here are a few tricks to make the perfect roast lamb from Heston Blumenthal. One of them is to slice the lamb across the grain first and then with the grain, leaving you with some nice chunky pieces of tender, juicy lamb.</p>
<p>Sear the leg of lamb in a very hot pan before stuffing it with garlic, fresh rosemary and anchovies. Only then roast in it the oven.</p>
<p>Allow the meat to rest for about 30 minutes before serving, this will ensure that it is cooked evenly all the way through.</p>
<p>Lastly slice the lamb across the grain first and then with the grain, leaving you with some nice chunky pieces of tender, juicy lamb.</p>

I think it&#8217;s a case of each new recipe usurping the one that came before.</p>
<p>Pastitsio is like a Greek version of lasagne - beef &amp; pasta with cinnamon, red wine &amp; cheese.</p>
<p>Tonight I&#8217;m going to be trying this one, as a practice run for the December holidays. It&#8217;s perfect for an early outdoor dinner, with a large table, umbrellas, crusty bread and light beers or red wine.</p>
<p>The original recipe calls for Greek Kefalotiri cheese. If you cannot get hold of some use Parmesan as I&#8217;ve done in the recipe below.</p>

<p><strong>Method</strong>:</p>
<p><strong>For the Meat Sauce</strong></p>
<ol>
<li>Chop the onion, garlic cloves, celery and the fresh oregano</li>
<li>Grate the cheese</li>
<li>Whisk the eggs</li>
</ol>
<p><strong>Cooking:</strong></p>
<p><strong>For the Meat Sauce</strong></p>
<ol>
<li>Heat some olive oil in a pan</li>
<li>Add the onion, garlic &amp; celery</li>
<li>Cook until it turns soft and golden</li>
<li>Toss in the mince and brown over a high heat, breaking up the lumps, about 4 minutes</li>
<li>Pour in the red wine, chopped tomatoes, tomato puree, cinnamon, ground cloves, both the dry and fresh oregano, bay leaves, water and salt &amp; pepper.</li>
<li>Simmer until the sauce has thickened, about 30 &#8211; 40 minutes</li>
<li>When done take off the heat and remove the cinnamon and bay leaves.</li>
</ol>
<p><strong>For the pasta</strong></p>
<ol>
<li>Cook as per the packet instructions</li>
<li>Drain and transfer to a bowl</li>
</ol>
<p><strong>For the White Sauce</strong></p>
<ol>
<li>Melt the butter in a saucepan</li>
<li>Add the flour and cook for about 1 minute while stirring (medium heat)</li>
<li>Gradually pour in the milk, stirring well, bring to a boil amd then simmer on low for up to 7 minutes.</li>
<li>Stir every now and again.</li>
<li>Season with the nutmeg and salt &amp; pepper</li>
</ol>
<p><strong>Bringing it all together</strong></p>
<ol>
<li>Preheat the oven to 180C</li>
<li>Pour 250 ml of the white sauce over the pasta</li>
<li>Pour in the whisked eggs</li>
<li>Add half of the grated cheese</li>
<li>Mix it well</li>
<li>Grease an oven proof baking dish</li>
<li>Spread a third of the pasta into the baking dish</li>
<li>Cover with the meat sauce</li>
<li>Add another third of the pasta and the rest of the meat sauce</li>
<li>Add a third layer of pasta and spoon over the rest of the white sauce</li>
<li>Mix the remaining cheese with the breadcrumbs and sprinkle over the top</li>
<li>Bake for 40 minutes</li>
</ol>
<p>Best served outdoors at a big table with umbrellas, lots of crusty bread, light beer or red wine</p>

<p><strong>A little <a rel="nofollow" href="http://en.wikipedia.org/wiki/Pastitsio">wiki</a> about Pastitsio</strong></p>
<p><strong>Pastitsio</strong>, sometimes spelled <em>Pastichio</em>, is a Greek and Mediterranean baked pasta dish including ground beef and bechamel sauce in its best-known form.</p>
<p><strong>Pastitsio</strong> takes its name from the Italian <em>pasticcio</em>, a large family of baked savoury pies which may be based on meat, fish, or pasta.Many Italian versions include a pastry crust, some include bechamel.The word <em>pasticcio</em> comes from <em>pasta</em> and means &#8216;pie&#8217;, and has developed the figurative meanings of &#8216;a mess&#8217;, &#8216;a tough situation&#8217;, or a <em>pastiche</em>.</p>
<p>The typical <strong>Greek </strong>version has a bottom layer that is bucatini or other tubular pasta, with cheese and egg as a binder; a middle layer of ground beef, veal or lamb with tomato and cinnamon, nutmeg or allspice; another layer of pasta; and a top layer of sauce, varying from an egg-based custard to a flour-based Bechamel or a Bechamel with cheese (known as Mornay sauce in France). Grated cheese is often sprinkled on top. Pastitsio is a common dish, and is often served as a main course, with a salad.</p>
<p><strong>About Rick Stein</strong></p>
<p><strong>Rick Stein</strong> opened his first business in Padstow in 1974, and now specialises in fish cookery. His business operates four restaurants, a bistro, a cafe, a seafood delicatessen, patisserie shop, a gift shop and a cookery school. His impact on the local economy of Padstow is such that it has been nicknamed &#8220;Padstein&#8221; despite the phrase being openly disputed by Rick himself.</p>
<p>In 2009 <strong>Rick Stein</strong> made his first acquisition in the nearby trading village of St Merryn, which is 3.5 miles from Padstow. When taking over the Cornish Arms public house, which is located on the outskirts of St Merryn, Stein&#8217;s stated aim was to &#8216;keep it a traditional Cornish pub&#8217;<sup id="cite_ref-6">.</sup></p>
<p>On 1 October 2009, <strong>Rick Stein</strong> opened with his fiancee publicist Sarah Burns, &#8220;Rick Stein at Bannisters&#8221; in Mollymook, on the South Coast of New South Wales, Australia. Rick said at the time of opening, &#8220;Ever since a memorable weekend eating Pambula oysters and flathead in Merimbula in the sixties, I&#8217;ve had the image of the clean blue sea and sweet seafood of the South Coast fixed in my head so when I was introduced to Mollymook about six years ago I knew that one day I would open up a restaurant celebrating local fish and shellfish but keeping it really simple. Bannisters was the relaxed seaside hotel that I was looking for, so when they asked me if I&#8217;d be interested in cooking there I jumped at the opportunity&#8221;.</p>
<p>As well as running his business, <strong>Rick Stein </strong>has become a popular television presenter on food. Gaining early exposure after appearing on Keith Floyd&#8217;s 1984 series <em>Floyd On Fish</em> as a guest chef, he was noticed by the show&#8217;s producer and was later offered the chance to present his own series, similar in vein to the &#8220;travelogue&#8221; style of cookery show pioneered by Floyd on BBC television including <em>Rick Stein&#8217;s Taste of the Sea</em>, <em>Fruits of the Sea</em>, <em>Seafood Odyssey</em>, <em>Fresh Food</em>, <em>Seafood Lovers&#8217; Guide</em>,<em>Food Heroes</em>, and in 2005 <em>French Odyssey</em> about a memorable journey down the canals of South Western France to the Mediterranean, <em>Mediterranean Escapes</em>. This starts where French Odyssey left off, and explores the Mediterranean coastline and islands in search of the best in the region&#8217;s foods. Rick Stein&#8217;s <em>Far Eastern Odyssey</em>, travelling around Malaysia, Cambodia, Thailand, Vietnam and Indonesia.</p>
<p>His current television programme is about the cooking of Spain off the beaten track.Stein was often accompanied by his Jack Russell terrier, Chalky, who died in January 2007.</p>
<p>A book has accompanied each series, and his book <em>English Seafood Cookery</em> won the Glenfiddich Award for Food Book of the Year in 1989. <strong>Rick Stein</strong> was awarded the OBE in the 2003 New Year Honours list for services to tourism in Cornwall.</p>

1	.	With a sharp knife and the skin facing upwards, pinch the steaks, and gentley cut &#038; score the skin of the Salmon.<br />
2	.	Make sure your fish is bone dry, and pat with papper towel if need be.<br />
3	.	Lightly season both sides with salt.<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	To make the perfect, crispy skin, you need to start with a COLD pan.<br />
2	.	You will need a good non-stick pan.<br />
3	.	Add a little Olive Oil.<br />
4	.	Add the Salmon, skin side down, and turn on the heat.<br />
5	.	Press and flatten the fish, swirling around to ensure there are no bubbles and the skin can brown evenly.<br />
6	.	After 1 and half minutes, remove pan from heat and carefully lift the fish with a spatular to see how the skin is browning.<br />
7	.	Return to the heat and cook for another 1 and a half minutes and look again.<br />
8	.	You may have to repeat again.<br />
9	.	Once crispy, gently turn the fish over.<br />
10	.	Add a knob of butter and cook the other side for 2 minutes.<br />
11	.	Remove fish and place on a paper towel.<br />
12	.	Leave butter and juices on the heat, add a little freshly squeezed Lemon Juice and a few Sage leaves.<br />
13	.	Cook for a few minutes.<br />
14	.	Plate your fish, laddle over the brown, buttery, sage and lemon jus.<br />
15	.	And serve.<br />

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1	.	Peel the pears, halve and scoop out the cores.<br />
2	.	Poach the pears in sugar water, with a squeeze of lemon to stop the pears going brown and a vanilla pod.<br />
3	.	Simmer for 15 – 20 minutes until the pears are tender.<br />
4	.	Allow the pears to cool in the syrup for an hour.<br />
5	.	Remove from the syrup and transfer to the fridge.<br />
6	.	Whip the cream to a light peak<br />
7	.	Chop up the biscuits and mix into the cream<br />
8	.	Break up the chocolate and melt in a bowl over a pan of simmering water.<br />
9	.	Fill the pears with the cream.<br />
10	.	Drizzle the chocolate over the top<br />
11	.	Leave in the fridge for a few minutes before serving.<br />

1	.	Bring the vinegar and sugar to boil over a high heat for one minute<br />
2	.	Pour over the thinly sliced red onions and leave to stand until cool<br />
3	.	Mix the sour cream and lime zest together<br />
4	.	Braai the boerewors<br />
5	.	If pre-made reheat the chilli con carne<br />
6	.	Assemble the boerewors rolls, first with the red onions, the boerewors and the chilli con carne<br />
7	.	Sprinkle with the grated cheese and finally drizzle with the sour cream &#038; lime.<br />

<div><strong>Method:</strong><br />

	<strong>	For the Chilli	</strong><br />
1	.	Dice the onion<br />
2	.	Crush the garlic<br />
3	.	Deseed and chop the chilli<br />
4	.	Prepare the beef stock<br />
5	.	Drain &#038; rinse the kidney beans<br />
6	.	Drain and chop the pepperdews<br />
	<br /><strong>	Cooking:	</strong><br />
	<br /><strong>	For the Butter	</strong><br />
1	.	Heat some olive oil in a pan<br />
2	.	Lightly fry the cumin and chilli powder (1 1/2 min)<br />
3	.	Pour into a bowl and add the rest of the butter ingredients, paprika, tomato sauce, Worcestershire sauce, Marmite &#038; softened butter.<br />
4	.	Mix together and put in the fridge<br />
	<br /><strong>	For the chilli	</strong><br />
1	.	Add some olive oil to a pan on high heat<br />
2	.	Add the mince and brown<br />
3	.	Remove and de-glaze the pan with a little water, adding to the mince<br />
4	.	Reduce heat to medium, add some oil<br />
5	.	Add the star anise &#038; onions, cook until onions are soft and begin to colour<br />
6	.	Add the garlic &#038; green chilli<br />
7	.	Cook for 5 minutes<br />
8	.	Add the tomato paste, stir and cook for 5 minutes<br />
9	.	Return the mince to the pan<br />
10	.	Pour in the red wine and reduce by 2/3rds<br />
11	.	Add the tomatoes and beef stock and simmer over low heat for one hour<br />
12	.	Add the beans &#038; chopped pepperdews<br />
13	.	Simmer until heated through<br />
14	.	Stir in 2 1/2 tablespoons of the butter<br />
15	.	Remove the star anise<br />
16	.	Season with salt &#038; pepper<br />
17	.	Serve with the sour cream, butter and lime zest &#038; juice<br />
