Hake Recipe wrapped in Parma Ham & Pesto with Tomato Confit

This is a delicious Hake Recipe using Pesto and Parma Ham to deliver some meaty flavour and accompanied by a Tomato Confit.

We are also delighted to see that the Chef is using South African Hake for his recipe.

Hake Recipe wrapped in Parma Ham & Pesto with Tomato Confit | Young Sea Food

Serving: 2 | Prep: 10 min | Cooking: 15 min

Ingredients:
For the hake
Hake 2 fillets
Parma Ham 2 slices
Pesto 2 tablespoons
Olive Oil
For the Tomato Confit
Vine Cherry Tomatoes 12
Garlic 5 cloves
Rosemary 3 sprigs
Salt & Pepper 125 g
Olive Oil

Method:

For the Tomato Confit
1 . In a baking dish place the cherry tomatoes on the vine
2 . Crush and add the garlic cloves
3 . Add the sprigs of rosemary
4 . Season with salt & pepper
5 . Drizzle with a few lugs of olive oil, you can be generous
6 . Into the oven for 15-20 minutes at 180°C

For the hake:
1 . Lay the Parma Ham out flat
2 . Place the hake fillets on top
3 . Spread some pesto onto the hake fillets
4 . Wrap the Parma Ham around the fish
5 . Drizzle some olive oil on a roasting tray
6 . Place the Parma wrapped hake fillets on the roasting tray
7 . Into the oven at 180°C for 15 minutes
