It is generally accepted that the best way to make chips is to double fry with the second session in the oil to get the chips crispy and golden.
- Slice to your preferred size
- Blanch in oil at 150°C for a 10 minutes
- Remove, drain and return with the oil temperature moved up to 180°C to get them crispy and golden.
- Drain and serve
