Congolese Liboke de Poisson Recipe (Maboke) | Zola Nene

Zola Nene tried her hand as South Africanising the Congolese dish Liboke de Poisson with great success.

The team down at the Expresso Show are using Yellowtail for this fish braai but as usual use your locally available green listed white fish.

Liboke de Poisson (Maboke) | Fish Braai Recipe | Zola Nene

Serving: 4 | Prep: 10 min | Cooking: 20 min

Ingredients:

Banana leaves 2 centre rib removed
Yellow tail 2 fillets
Onion 1 chopped
Lemons 2 juiced
Cayenne pepper 1 teaspoon
Tomato 1 chopped
Fresh Coriander a handful chopped
Coconut cream 4 tablespoon
Salt
Pepper
Method:

1 . Mix the onion, lemon juice and cayenne pepper together in a bowl
2 . Rub the mixture onto the Yellowtail or whichever white fish you are using
3 . Heat up the banana leaves over an open flame or grill
4 . Place the fish onto the banana leaves, add the the tomato, coriander and pour over the coconut cream
5 . Fold over to encase, tie with string
6 . Cook on a braai or in the oven
7 . Cook for 7 minutes, turn and cook a little while longer.
