Mustard Glazed Pork Fillet Recipe with Prunes | Waitrose

Ingredients:
Garlic Cloves | 2 | ||
Mustard | 1 | tablespoon | |
Brown Sugar | 1 | tablespoon | |

Pork Fillet | |||
Sunflower Oil | |||
Prunes | 300 | ||
Cider | 300 | ||
Thyme | 1 | ||
Creme Fraiche | 2 | tablespoons | |
Vegetable Oil | 1 | lug |
Method:
1 . Chop the garlic cloves
2 . Mix together the chopped garlic, mustard, brown sugar and a little salt for seasoning.
3 . Coat the pork fillet with the marinade
4 . Cover and marinade for 15 minutes
Cooking:
1 . Heat a little oil in a pan
2 . Brown the pork fillet on both sides
3 . Add the prunes
4 . Pour in the cider
5 . Sprinkle in the thyme
6 . Cover and simmer for 15 minutes until the pork fillet is cooked through.
7 . Remove the pork fillet and allow to rest
For the sauce
1 . Allow the juices in the pan to reduce by half
2 . Add the creme fraiche and stir in well
3 . Best served with mash potato and shredded cabbage
