- De-seed and quarter the peppers
- Rub the peppers with a little bit of olive oil
- Place the peppers on a roasting tray under the grill for 10 -15 minutes.
- The skin caramelises and makes them easy to peel.
- Place the peppers into a freezer bag, seal it and leave for 10 minutes while they cool.
- Remove from the bag and peel.
