How to make perfect chips with Dhruv Baker

This is an easier way than Heston Blumenthal as Dhruv Baker shares a more practical method on how to make perfect chips at home.

Dhruv recommends Maris Piper potatoes, a floury type of potato.

It is generally accepted that the best way to make chips is to double fry with the second session in the oil to get the chips crispy and golden.

  1. Slice to your preferred size
  2. Blanch in oil at 150°C for a 10 minutes
  3. Remove, drain and return with the oil temperature moved up to 180°C to get them crispy and golden.
  4. Drain and serve
