Minted Pea & Watercress Veloute Recipe

Minted Pea & Watercress Veloute Recipe | Gordon Ramsay

Serving: 4 | Prep: 15 min | Cooking: 10 min

Ingredients:
Onion 1/2
Bacon 4
Mint Leaves small bunch
Watercress a large bunch
Peas 500 g
Cream 30 ml
Salt
Olive Oil
Water 500 ml
Method:

1 . Slice the onion
2 . Chop the bacon
3 . Chop the mint leaves
4 . Boil the water

Cooking:
1 . Heat some oil in a pan
2 . Saute the onions till soft and the bacon till brown
3 . Add the mint leaves
4 . Season with salt
5 . Add watercress
6 . Wilt the mint & watercress down for 30 seconds
7 . Add the peas
8 . Pour in the boiling water
9 . Cook for 2 minutes
10 . Remove from heat and blitz
11 . If too thick add a splash of water
12 . Season with salt & pepper
13 . Drizzle with cream
