		</p><p>A Salmon Recipe cooked with cedar planks with a maple glaze.</p>
<p>Here is a very new way for you to cook salmon, on a board of cedar wood in the oven. Just the thought of it makes my nostrils twitch trying to pick up the scent.</p>
<p>You can also use the planks for cooing fish or meat on a braai, just use an indirect method of cooking.</p>
<p>If you can&#8217;t get hold of cedar you can use oak or any other option you can find. One that has been used to age wine in would be very handy.</p>
<p>If you cannot find any planks the maple glaze will still come in very handy.</p>

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1	.	Pour the maple syrup into a pan<br />
2	.	Add the chopped ginger, lemon juice, soya sauce and chopped garlic cloves.<br />
3	.	Reduce for 20 min on low heat, simmer<br />
4	.	Put your cedar board in the oven for 15 minutes with some oil spread over it to toast.<br />
5	.	Slice the spring onions diagonally<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Sprinkle the spring onions on the toasted cedar board and place the salmon on top, skin side down<br />
2	.	Brush the glaze onto the surface of the salmon<br />
3	.	Pop into the centre of the oven an cook for 30 min at 180C<br />

		</p><p>This Peruvian Ceviche is very quick and easy to make and you can use any firm white flesh fish, we are using Angelfish.</p>
<p>You can marinade the Angelfish overnight which is perfect if you are entertaining and want to get as much done the day before as possible.</p>
<p>This is a great light lunch or starter and would be perfect for a braai day too, especially if the braai is red meat all the way.</p>
<p>Angelfish are on the SASSI Green List, other options include Gurnard or Hake.</p>

	<strong>	For the fish:	</strong><br />
1	.	Clean the fish, if whole and fillet.<br />
2	.	Cut into cubes and place in a bowl<br />
	<br /><strong>	For the marinade:	</strong><br />
1	.	Grate half the garlic clove and a little bit of ginger (small quantities)<br />
2	.	Chop up some chillies, the quantity is up to you.<br />
3	.	Mix the ginger, garlic and chillies together<br />
4	.	Slice the onions, very thin and place them in a bowl of water.<br />
5	.	Peel and boil the sweet potato<br />
	<br /><strong>	Putting it together:	</strong><br />
1	.	Salt the fish, add the onions, ginger, garlic and chilli.<br />
2	.	Pour over the lime juice and leave to marinade for 15 minutes or longer, even overnight<br />
	<br /><strong>	Plating up:	</strong><br />
1	.	Serve with slices of sweet potato, lettuce, some extra chillies	and a sprinkling of coriander.<br />

	<strong>	For the Crab Mash	</strong><br />
1	.	Pour a little oil in a pan<br />
2	.	Add the peeled &#038; par boiled potatoes and heat them up<br />
3	.	Remove and crush gently with a fork to absorb the olive oil<br />
4	.	Chop and add the spring onions<br />
5	.	Add the crab meat<br />
6	.	Mix it all together<br />
7	.	Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)<br />
8	.	Add some freshly chopped coriander<br />
9	.	Mix together<br />
	<br /><strong>	For the Crispy Trout</strong><br />
1	.	Roll the trout fillets up and score/slice into the meat through the skin<br />
2	.	Season with salt &#038; pepper and stuff with fresh thyme or basil<br />
3	.	Heat the oil and when it begins to smoke, add the salmon<br />
4	.	Leave and turn once<br />

<p>You will notice in the video that they are using cod, which is not a popular choice of fish in South Africa so we have naturally switched over to Hake.</p>
<p>This dinner is a no fuss recipe that will deliver a great tasting piece of fish which will simply need a lemon wedge to finish it off. The potatoes taste really good too having been cooked with the remnants of the chorizo oil.</p>

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1 . Preheat the oven to 200°C<br />
2 . Peel and dice the potatoes into 1 cm cubes<br />
3 . Place the potatoes in a pot of water, bring to the boil and cook for 3 minutes.<br />
4 . Drain the potatoes and set aside<br />
5 . Heat some oil in a frying pan<br />
6 . Fry the chorizo for 2 minutes or until crispy and golden<br />
7 . Remove and set aside, leaving the oil in the pan<br />
8 . Sprinkle the hake with paprika<br />
9 . Place in the pan with the hot chorizo oil<br />
10 . Cook for 1 minutes each way or until golden<br />
11 . Transfer the hake to a roasting tray and cook in the oven for 10 minutes<br />
12 . Heat a little oil in the frying pan<br />
13 . Add the potatoes to the frying pan until crisp<br />
14 . Add the chorizo and mix together<br />
15 . Ready to serve.</p>

<p>The event was attended by some of Gautengs top foodies including the published <a rel="nofollow" href="http://afoodieliveshere.co.za/" target="_blank">Sarah Graham, A Foodie Lives Here</a> and <a rel="nofollow" href="http://simply-delicious.co.za/" target="_blank">Alida Ryder, Simply Delicious</a>. Stefan had made the journey up from Cape Town along with Caro de Waal, editor of Food 24 and my fellow Dinner Divas Judge.</p>
<p>Stefan kicked off the evening with a demo of this recipe before the foodies set about preparing a 3 course meal which was to be judged by Stefan, Caro and Jannine Basson of SASSI.</p>
<p>Despite your&#8217;s truly scoring 4/5 for his trout starter Stefan&#8217;s dish was still the best of the evening for two simple reasons.<br />
1. It only takes about 12 minutes to make.<br />
2. It&#8217;s delicious.</p>

1 . Heat up some oil on a medium heat<br />
2 . Season the fish with salt &amp; pepper<br />
3 . Season the flour with a little salt &amp; pepper<br />
4 . Coat the hake fillets in the flour and dust off any excess<br />
5 . Add the fish to the pan, cook for 1 minute and turn<br />
6 . De-glaze the pan with white wine<br />
7 . Pour in the cream<br />
8 . When the cream begins to bubble add the par boiled new potatoes and peas<br />
9 . Cook for another couple of minutes<br />
10 . Add the mint, the cos lettuce and butter<br />
11 . Squeeze in some lemon juice and serve</span></span>&nbsp;</p>

<span class="instructions"><br />
1	.	Heat up the butter<br />
2	.	Saute the onion and thyme until soft and translucent<br />
3	.	Add the  garlic, chilli flakes, apricot jam and lemon juice (1)<br />
4	.	Cook for 2 more minutes on a low heat<br />
5	.	Baste the butterflied snoek with the apricot basting sauce<br />
6	.	Braai for 2 minutes, turn and baste<br />
7	.	Repeat every couple minutes until the snoek is cooked through</p>
<p>Serve with a salad and lemon wedges.<br />

<p>They are joined by Dr. Luke who has a wonderful dieting trick, eat your food off smaller plates. Your mind is a very powerful tool and as you finish your meal your mind will recognise that the plate is now empty and as such it logically follows that you must be full. Its all very Vulcan to me.</p>
<p>If you want to take this a step further we recommend you follow Lord Alan Sugar&#8217;s advice and in addition to the smaller plate, eat your meal with a small fork. He claims this has worked for him in losing the extra pounds so by combining the two techniques together you should be waif like in no time at all.</p>

<li>Crush the garlic</li>
<li>Chop the parsley</li>
<li>Zest the lemon</li>
<li>Mix together in a bowl with olive oil</li>
<li>Season with salt &amp; pepper</li>
<li>Peel &amp; quarter the potatoes</li>
<li>Chop the chives</li>
</ol>
<p><strong>Cooking:</strong></p>
<ol>
<li>Preheat the oven to 220C</li>
<li>Boil the potatoes for 15-20 minutes until tender</li>
<li>When done mash with a little butter, salt and mix in the chives</li>
<li>Lay the hake fillets in a baking dish</li>
<li>Spread the garlic, lemon zest &amp; parsley mix over the fish</li>
<li>Bake in the oven for 10 minutes</li>
</ol>
<p>Serve with the mash and greens of your choice</p></div>

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1	.	With a sharp knife and the skin facing upwards, pinch the steaks, and gentley cut &#038; score the skin of the Salmon.<br />
2	.	Make sure your fish is bone dry, and pat with papper towel if need be.<br />
3	.	Lightly season both sides with salt.<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	To make the perfect, crispy skin, you need to start with a COLD pan.<br />
2	.	You will need a good non-stick pan.<br />
3	.	Add a little Olive Oil.<br />
4	.	Add the Salmon, skin side down, and turn on the heat.<br />
5	.	Press and flatten the fish, swirling around to ensure there are no bubbles and the skin can brown evenly.<br />
6	.	After 1 and half minutes, remove pan from heat and carefully lift the fish with a spatular to see how the skin is browning.<br />
7	.	Return to the heat and cook for another 1 and a half minutes and look again.<br />
8	.	You may have to repeat again.<br />
9	.	Once crispy, gently turn the fish over.<br />
10	.	Add a knob of butter and cook the other side for 2 minutes.<br />
11	.	Remove fish and place on a paper towel.<br />
12	.	Leave butter and juices on the heat, add a little freshly squeezed Lemon Juice and a few Sage leaves.<br />
13	.	Cook for a few minutes.<br />
14	.	Plate your fish, laddle over the brown, buttery, sage and lemon jus.<br />
15	.	And serve.<br />

<p>This recipe involves a lot of hard work but is guaranteed to be worth it when you serve Michelin style food at the dinner table.</p>
<p>Michel Roux Jr used parsley and watercress for a natural green colouring of his fish terrine and this technique will no doubt be of some use to you for other recipes.</p>

<div><strong>Method:</strong><br />
1 . Add the Cape Whiting to a blender<br />
2 . Add the egg whites<br />
3 . Purée, but not for too long you do not want the fish to heat up and begin to cook.<br />
4 . Once done pass through a sieve<br />
5 . Add 300 ml of cream<br />
6 . Season with salt &amp; pepper<br />
7 . Fold the purée over until it begins to thicken<br />
8 . Add some more cream as needed, as much as 500 ml and an egg<br />
9 . Continue to fold until it reaches the right consistency, smooth and elastic.<br />
10 . Divide into two portions.</p>
<p><strong> For the green colouring </strong><br />
1 . Into the blender add the parsley, watercress and some water<br />
2 . Blitz and pour into a saucepan<br />
3 . Bring to 86°C on the stove and scoop off the chlorophyll that rises to the top and pass through a muslin cloth<br />
4 . Mix the green colouring with half of the fish mousse</p>
<p><strong> Bringing it all together </strong><br />
1 . Use a mallet to flatten the sole fillets<br />
2 . Lay them out flat lined up against each other on some cling wrap<br />
3 . Use a piping bag to pipe the green mousse out onto the sole fillets<br />
4 . Roll the fillets up lengthways<br />
5 . Line your terrine dish with butter<br />
6 . Line the terrine dish with spinach, but first dip them in boiling water and then cool them in iced water.<br />
7 . Pipe the plain fish mousse into the base of the spinach lined terrine dish<br />
8 . Remove from the cling wrap and place the sole &amp; green mousse into the dish<br />
9 . Pipe in some green fish mousse<br />
10 . Top off with the plain fish mousse<br />
11 . Fold over the spinach leaves and cover the top of the terrine with additional spinach leaves leaving it totally encased</p>
<p><strong> Cooking: </strong><br />
1 . Place the terrine into a roasting tray<br />
2 . Cover it with foil<br />
3 . Pour in some boiling water around the terrine<br />
4 . Into the oven on medium heat 130°C for two hours<br />
5 . Allow to set in the fridge for 6-8 hours</p>

1	.	Start with the salsa<br />
2	.	Chop all the salsa ingredients up<br />
3	.	Mix together in a bowl with the mint and dhania leaves<br />
4	.	Add paprika,  lemon pepper, caster sugar,  lemon juice and a pinch of salt<br />
5	.	Preheat a little oil in a frying pan<br />
6	.	Season salmon fillets with lemon juice and salt and pepper.<br />
7	.	Add to the pan and cook for a couple of minutes each way. I normally go skin side down first<br />
8	.	Add the vine tomatoes and saute<br />

<p>The best fish I have ever eaten has always been in SE Asia &amp; China, they seem to have the perfect ingredients for turning fish into an aromatic delight.</p>
<p>That is what makes this recipe so fantastic, as you open up the foil there is an explosion of aromas.</p>
<p>I&#8217;d recommend you do the final prep and garnish at the table so your dinners get the full impact of the fragrant aromas the burst free. You can prepare this dish well in advance and keep it it the fridge.</p>
<p>You only need pop it in the oven 15-20 minutes before you begin to eat your starters and let it rest.</p>

1	.	Finely slice the ginger<br />
2	.	Finely slice the spring onions lengthways<br />
3	.	Slice the chilli<br />
4	.	Mix them together in a bowl (set some aside for cooking with)<br />
5	.	Pour in some soy sauce<br />
6	.	Pour in a little chicken stock<br />
7	.	Chop and add some coriander<br />
8	.	In a bowl mix together some oil and the fish stock into a paste<br />
9	.	Season the fish with the paste<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Preheat the oven to 180C<br />
2	.	Layer a larger piece of foil over a baking tray<br />
3	.	Drizzle with olive oil<br />
4	.	Layer some ginger and spring onions over the foil<br />
5	.	Place the fish on top in the middle<br />
6	.	Wrap the foil over the fish, folding to seal<br />
7	.	Before you seal the final part, drizzle some white wine in<br />
8	.	Place in the oven for 15-20 minutes (depending on the size, check after 15 minutes)<br />
9	.	Use scissors to cut open the foil<br />
10	.	Garnish with a little of the sauce, saving some for the table<br />
11	.	Garnish with fresh coriander<br />

<p>The key to this recipe is the pineapple glaze along with the avocado &#038; mango salad, it is such a refreshing use of the ingredients that it would find a grateful home on every lunch table it appears on during the summer.</p>
<p>Grilling those slightly under rip avocados is a brilliant idea and also supports the <a rel="nofollow" href="/how-to-ripen-avocados-in-10-minutes/26876/">how to ripen avocado&#8217;s in 10 minutes video</a>!</p>
<p>Sea Bass is on the SASSI Red List so please find another option. As Curtis is using Barramundi (which is of the same family, Sea Bass) we have kept the recipe as per the original. You could use practically any white fish for this.</p>
<p>This recipe would also work well on the braai or barbecue, basting the fish with the pineapple glaze as you go.</p>

<div><strong>Method:</strong><br />

1	.	Marinade the red onions in the red wine vinegar with a ¼ teaspoon of salt for 30 minutes.<br />
	<br /><strong>	For the Pineapple Glaze	</strong><br />
1	.	Peel the pineapple half and blitz in a food processor<br />
2	.	Pour into a sauce pan over medium heat<br />
3	.	Add the brown sugar and soy<br />
4	.	Cook until the sugar has dissolved stirring continuously.<br />
5	.	Pour in the lime juice, stir a little more and remove from the heat.<br />
	<br /><strong>	For the Vinagrette	</strong><br />
1	.	Mix together the lime juice, sugar and soy.<br />
2	.	While whisking slowly add the olive oil<br />
	<br /><strong>	For the Avocado	</strong><br />
1	.	Preheat a griddle pan on a medium- high heat.<br />
2	.	Slice the avocados into wedges and sprinkle with a little salt and olive oil<br />
3	.	Grill the avocado side down for 1-2 minutes than turn to do the other side for 1-2 minutes<br />
4	.	Allow to cool<br />
	<br /><strong>	For the Fish	</strong><br />
1	.	Preheat the oven to 200°C<br />
2	.	Place the fish fillets on a baking tray, covered with foil and a little oil<br />
3	.	Spoon the glaze over the fish fillets<br />
4	.	Bake in the oven for approximately 10 minutes<br />
5	.	Serve with the avocado &#038; mango salad<br />
6	.	Drizzle with the vinaigrette and red onion pickle<br />

<p>Every time you try a new recipe the most important thing to remember is how to make the sauce. Fish is a piece of fish and meat is just a piece of meat, it&#8217;s the sauce that makes all the difference. Just like in life.</p>
<p>In this recipe Gordon uses a red and yellow pepper to make the sauce to go with the Sea Bass. He hands out a decent tip for slicing up peppers and that is to cut around the core and the seeds and not cut them in half.</p>

1 . Slice the peppers and shallots<br />
2 . Lay the fish on a cutting board, skin side up and score every 2 cm along the length<br />
3 . Add salt &amp; thyme leaves to each score<br />
4 . Drizzle with olive oil<br />
5 . For the pepper sauce<br />
6 . Heat some olive oil in a hot pan<br />
7. Add the peppers and the shallots<br />
8 . Add the star anise<br />
9 . Season with a pinch of salt<br />
10 . Stir well and cook until peppers soften up<br />
11 . Add the basil and pour in the white wine vinegar &amp; vermouth<br />
12 . Reduce for a few minutes on a medium heat until the liquid has gone<br />
13 . Add enough water to the pan to cover the peppers half way<br />
14 . Bring to the boil then reduce to a simmer until half the liquid has gone<br />
15 . Transfer the contents of the pan to a blender and blitz into a sauce</p>
<p><strong>For the fish</strong><br />
1 . Heat olive oil in a pan<br />
2 . Add the fish, skin side down<br />
3 . After a couple of minutes turn and finish for a couple minutes more.</span></span>

1 . Slice the salmon into small cubes<br />
2 . Chop up the spring onions<br />
3 . Chop up the dill<br />
4 . Chop up the chilli, deseed if you don&#8217;t want it too hot<br />
5 . Mix it all together in a bowl<br />
6 . Then add the mustard and mix it in<br />
7 . Season with salt &amp; pepper<br />
8 . Add the egg &amp; breadcrumbs<br />
9 . Mis together well.<br />
10 . Divide into 4</p>
<p><strong> Cooking: </strong><br />
1 . Heat up a frying pan with a little oil<br />
2 . Cook for 2 minutes each way<br />

1 . Mix the onion, lemon juice and cayenne pepper together in a bowl<br />
2 . Rub the mixture onto the Yellowtail or whichever white fish you are using<br />
3 . Heat up the banana leaves over an open flame or grill<br />
4 . Place the fish onto the banana leaves, add the the tomato, coriander and pour over the coconut cream<br />
5 . Fold over to encase, tie with string<br />
6 . Cook on a braai or in the oven<br />
7 . Cook for 7 minutes, turn and cook a little while longer.<br />

4 . Place the butter in a bowl.<br />
5 . Chop and add the dill, basil and lemon zest.<br />
6 . Mix together well<br />
7 . Season with salt &amp; pepper</p>
<p><strong> For the salmon </strong><br />
1 . Season with salt and pepper<br />
2 . Spread the wholegrain mustard on one side of one of the salmon fillets<br />
3 . Spread the butter on one side of the other salmon fillet<br />
4 . Sandwich the two salmon fillets together<br />
5 . Place on the pastry and trip away the excess<br />
6 . Brush around the salmon with egg wash<br />
7 . Fold the pastry over the salmon making a neat parcel<br />
8 . Place on a baking tray with the seam at the bottom<br />
9 . Brush with egg wash<br />
10 . Season with salt and pepper<br />
11 . Score the pastry<br />
12 . Bake in the oven for 25-30 minutes, or until golden brown</p>
<p><strong> For the potatoes </strong><br />
1 . Boil the potatoes for 15 minutes in salted water or until tender.<br />
2 . Strain and drizzle with olive oil<br />
3 . Chop and add the dill and basil<br />
4 . Season with salt and pepper</p>
<p><strong> For the broccoli </strong><br />
1 . Cut the broccoli into florets and the larger ones in half<br />
2 . Boil in salted water for 3 minutes<br />
3 . Drain and sauté in a dry pan for 1 minutes<br />
4 . Crush and add the garlic with a drizzle of olive oil<br />
5 . Season with salt and pepper<br />
6 . Sauté for another minute

<div><strong>Method:</strong><br />
<span class="instructions"><br />
	<strong>	For the Batter	</strong><br />
1	.	Whisk the flour, beer and a pinch of salt &#038; pepper together.<br />
2	.	In a second plate or cutting board layer out some breadcrumbs.<br />
	<br /><strong>	For the Fish	</strong><br />
1	.	Season with salt &#038; pepper<br />
2	.	Cut the fish into fat fillets, make sure that length wise they will fit well in you deep frying pan or wok.<br />
	<br /><strong>	For the Chips	</strong><br />
1	.	Using a Wok or a Deep Frying Pan (I like to use a wok) fill with about 7cm of Vegetable Oil and warm over a medium heat.<br />
2	.	Peel and slice the potatoes into your favourite chip shape, thick or thin, crisp shape or wedges.<br />
3	.	Sprinkle with white pepper.<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	When the oil in the wok has warmed up carefully drop in the chips. Now might be a good time to ask if you have a fire extinguisher in your kitchen. If not please go out and buy one tomorrow <img src="/wp-includes/images/smilies/icon_smile.gif?d3d828" alt=':)' class='wp-smiley' /> .<br />
2	.	Cook the chips for about 5 minutes then remove and pat down on kitchen paper.<br />
3	.	Turn the heat up to medium &#8211; high on the stove<br />
4	.	Take your fish fillets and one at a time dip them first in the batter and the lay them down on the breadcrumbs, turn them over and coat the other side.<br />
5	.	Gently drop them into the oil.<br />
6	.	Fry for about 4 &#8211; 5 minutes until golden brown<br />
7	.	Remove and drain on kitchen paper<br />
8	.	Return the chips to the oil for a final fling and remove when the begin to golden. Ultimately its up to you how you like you chips done.<br />
9	.	Remove the chips when ready and pat down with kitchen paper.<br />
10	.	Ready for serving with lemon wedges &#038; tarter sauce.<br />

3	.	Cook the trout, skin side down<br />
4	.	When the colour change reaches 2/3rds turn and cook for a minute more<br />
7	.	Plate the trout on top of the watercress and drizzle with salsa.<br />

	<strong>	For the Crab Mash	</strong><br />
1	.	Pour a little oil in a pan<br />
2	.	Add the peeled &#038; par boiled potatoes and heat them up<br />
3	.	Remove and crush gently with a fork to absorb the olive oil<br />
4	.	Chop and add the spring onions<br />
5	.	Add the crab meat<br />
6	.	Mix it all together<br />
7	.	Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)<br />
8	.	Add some freshly chopped coriander<br />
9	.	Mix together<br />
	<br /><strong>	For the Crispy Salmon	</strong><br />
1	.	Roll the fish up and score/slice into the meat through the skin<br />
2	.	Season with salt &#038; pepper and stuff with fresh thyme or basil<br />
3	.	Heat the oil and when it begins to smoke, add the salmon<br />

1	.	Season the hake<br />
2	.	Dust with flour<br />
3	.	Place in the pan<br />
4	.	Add the peas (125g per person)<br />
	<br /><strong>	For the oil	</strong><br />
1	.	In another small pan heat some olive oil<br />
2	.	Add 2 garlic cloves, 2 chillies and the bay leaf<br />
	<br /><strong>	For the sauce	</strong><br />
1	.	Blend the toasted almonds, toasted bread, 2 garlic cloves, parsley and wine together<br />
2	.	Pour in two cups of water<br />
3	.	Blend a little more<br />
4	.	Add the 2 cubes of fish stock<br />
5	.	Blend a little more<br />
	<br /><strong>	Back to the fish	</strong><br />
1	.	Season the fish and peas with salt<br />
2	.	Pour over the oil from the garlic, chilli and bay leaf<br />
3	.	Pour over the sauce<br />
4	.	Now turn on the heat and simmer for 15 to 20 minutes<br />
5	.	Transfer to oven proof dishes, individual servings work well for presentation.<br />
6	.	Half and add the hard boiled eggs and a chilli pepper<br />
7	.	Drizzle with a little more sauce<br />
8	.	Place under the grill for about 5 minutes until golden<br />
