1	.	Preheat the oven to 190C<br />
2	.	Season the chicken thigh fillets<br />
3	.	Heat a little olive oil in a pan<br />
4	.	Brown the chicken on both sides<br />
5	.	Transfer to a baking dish (grease it first with a little butter)<br />
6	.	Slice the tomatoes in half and place on top of the chicken thigh fillets<br />
7	.	In a bowl mix together the breadcrumbs, oregano, Grana Padano and a little seasoning<br />
8	.	Scatter the breadcrumb mixture over the top of the tomatoes<br />
9	.	Place in the preheated oven (190C) and bake for 45-50 minutes<br />

<p>Cape Malay recipes hold a proud position in South Africa&#8217;s culinary repertoire. They have enabled South African cooking to infuse Asian styles and ingredients into it&#8217;s own as it creates and defines its own cooking style. A country&#8217;s culinary identity should reflect the identity of its people and in one that is as diverse as South Africa this makes for an exciting array of dishes that bring together traditional African recipes with those that have migrated to the country over the centuries. It has brought together Asian, French, British, Portuguese and Greek to name but a few.</p>
<p>The origin of Cape Malay cooking in South Africa dates back to the days when the Dutch had control of present day Cape Town and the surrounding area. The earliest arrivals where from the Dutch held colonies in modern day Malaysia and Indonesia. Many of the immigrants were political and religious dissidents of Dutch rule in the region and sent into exile as slaves to the Cape. Many of South Africa&#8217;s traditional dishes and recipes were born out of the Cape Malay arrival in South Africa, bredie, bobotie, sosaties, koeksisters and the Cape Malay Curry to name but a few.</p>
<p>As with all recipes when it comes to the heat, use what your family can handle so manage your own recipe quantities when adding the chilli. You can also switch out the chicken for another substitute be it meat or seafood.</p>

	<strong>	For the chicken	</strong><br />
1	.	Mix together the masala, flour, salt &#038; pepper.<br />
2	.	Dust the chicken breasts with the flour<br />
3	.	Slice the onions<br />
4	.	Crush the garlic<br />
5	.	Chop the chillies<br />
6	.	Chop the coriander<br />
7	.	Chop the tomatoes<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Heat the oil and butter in a pan<br />
2	.	Brown the chicken breasts<br />
3	.	Remove and set aside<br />
4	.	Cook the onions, cumin seeds, fennel seeds and bay leaf for about 5 minutes on medium-low heat until the onions are soft.<br />
5	.	Add the tomatoes<br />
6	.	Add the masala,turmeric, garlic, chillies<br />
7	.	Cook until thick<br />
8	.	Add the chicken back into the pan and simmer until the chicken is cooked<br />
9	.	Just before it is ready add the yoghurt<br />
10	.	Garnish with coriander for serving<br />

1	.	In a mixing bowl mix together the marinade ingredients<br />
2	.	Coat the chicken with the marinade and leave for about 20-30 minutes<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Drizzle the roasting tray with a little oil<br />
2	.	Place the chicken in the roasting tray, pour the marinade into the cavity and brush over the chicken<br />
3	.	Sprinkle the chicken with crushed or dry rosemary and thyme<br />
4	.	Season with salt &#038; pepper<br />
5	.	Place in the oven at 180°C and cook for 45 minutes<br />
6	.	Baste with the black lemon and juices in the tray<br />
7	.	Pour in the chicken stock and cook for another 20-30 minutes until ready<br />
	<br /><strong>	For the Jus	</strong><br />
1	.	Remove the turkey and allow to rest	</strong><br />
2	.	Place the roasting tray on the stove and reduce over low heat by half<br />
3	.	Serve with greens, in this recipe Chef John is using Romaine lettuce, spinach or watercress will work just as well<br />
4	.	Drizzle with the jus<br />

<p>I am a sucker for a good curry, it does not have to be a hot one but simply deliver on the flavour. I always used to think that curry was all about being hot, well it isn&#8217;t. It&#8217;s about warm, rich flavours that linger for a little while and then dissipate with a few sips of an ice cold lager. Gordon Ramsay&#8217;s Chicken Tikka Masala Recipe delivers!</p>
<p>Chicken Tikka Masala is more of a British dish than Indian and considered to be one of the UK&#8217;s national dishes.<br />
There are a few possibilities as to the origins of Chicken Tikka Masala.</p>
<p>The first and most logical is that it was conceived by accident in India at a restaurant. Rahul Verma an expert on Indian street food in Delhi believes this to be the case and that it has developed from there</p>
<p>But there are strong claims that it is a British dish.</p>
<p>One claim is that a Pakistani chef, Mr Ali Ahmed Aslam of the Shish Kebab restaurant in Glasgow invented it when improvising with a sauce made from yoghurt, cream and spices.</p>
<p>One British MP, Mr Mohammed Sarwar believed quite strongly that this was the case and tabled a motion in the House of Commons that Glasgow be given European Protected Designation of Origin for Chicken Tikka Masala.<br />
The motion was not debated and it has not been spoken of since.</p>
<p>Others in Birmingham and Newcastle have also laid claim to being the first to invent Chicken Tikka Masala.</p>
<p>A survey in the UK claimed that it is that country&#8217;s most popular restaurant dish. One in seven curries sold in the UK is chicken tikka masala. The cross-cultural popularity of the dish in the UK led former Foreign Secretary Robin Cook to proclaim it as &#8220;a true British national dish&#8221;.<br />

<strong>Cooking:</strong><br />
1 . Heat up some ground nut oil in a pan<br />
2 . Add the onions, chilli garlic &amp; ginger<br />
3 . Saute on a low heat until soft<br />
4 . Add the chilli powder, turmeric, garam masala &amp; sugar<br />
5 . Cook for 2 minutes<br />
6 . Add the tomato puree &amp; chopped tomatoes<br />
7 . Cook for a few minutes and allow to reduce a little<br />
8 . Remove from the heat and pour into a blender<br />
9 . Blitz until smooth<br />
10 . Back to the pan add some more ground nut oil<br />
11 . Brown the chicken pieces<br />
12 . Pour the blended sauce back into the frying pan<br />
13 . Add the curry leaves<br />
14 . Simmer for 10 minutes or until the chicken is cooked. This will depend upon the thickness of your chicken pieces</span></span><strong>For the Rice:</strong><br />
1 . Pour the rice into a saucepan<br />
2 . Pour in the cold water<br />
3 . Season with salt &amp; pepper<br />
4 . Add the cardamom pods &amp; star anise<br />
5 . Cover and cook for 10 minutes (check the rice packet instructions)<br />
6 . Remove from heat and steam for 5 minutes<br />
7 . Remove the cardamom pods &amp; star anise</p>
<p><strong>For Serving:</strong><br />
1 . Stir the yoghurt &amp; 1/2 the coriander into the chicken<br />
2 . Season<br />
3 . Serve with the rice</p>

<p><strong>A little <a rel="nofollow" href="http://en.wikipedia.org/wiki/Garam_masala">wiki</a> about Garam Masala</strong></p>
<p><strong>Garam </strong>translates as hot and <strong>masala </strong>as mixture<em> </em>and is a blend of ground spices common in North Indian and other South Asian cuisines. It is used alone or with other seasoning&#8217;s. The word <em>garam</em> refers to intensity of the spices rather than capsaicin content. <strong>Garam masala</strong> is pungent, but not piquant.</p>
<p>The composition of <strong>garam masala</strong>differs regionally, with wide variety across India. Varying combinations of these and other spices are used in different garam masala recipes in accordance to region and personal tasteand none is considered more authentic than another.The components of the mix are toasted, then ground together.A typical Indian version of <strong>garam masala</strong> is:</p>

<li>black &amp; white peppercorns</li>
<li>cloves</li>
<li>Cinnamon</li>
<li>black &amp; white cumin seeds</li>
<li>black, brown &amp; green cardamom pods</li>
</ul>
<p>Some recipes call for spices to be blended with herbs, while others for the spices to be ground with water, vinegar, coconut milk, or other liquids, to make a paste. In some recipes nuts, onion or garlic may be added. The flavours may be carefully blended to achieve a balanced effect, or a single flavour may be emphasized. Usually a masala is toasted before use to release its flavours and aromas.</p>
<p><strong>Garam masala</strong> is available as a commercially prepared ground mixture. Many such mixtures may include a higher proportion of less-expensive spices and may contain <em>dried red chili peppers, dried garlic, ginger powder, sesame, mustard seed, turmeric, coriander, malibar leaves, star anise and fennel</em>. While commercial <strong>garam masala</strong> preparations can be bought ready ground, like all ground spice they do not keep well and lose some of their aroma over time. Whole spices, which keep fresh much longer, can be ground when needed using a mortar and pestle or electric coffee grinder. When commercially ground garam masala is used in dishes, it is often added at the end of cooking so that the remaining aroma is not lost. Whole garam masala, however, is added early to the cooking fat, oil, or ghee for a more pungent flavour.</p>

<p>The word comes from Persian (piece) and in Hindi and Urdu refers to a piece of meat, such as a cutlet, and the popular dish <strong>chicken tikka</strong> is made of chicken cutlets in a marinade. A westernised version, <strong>chicken tikka masala</strong>, a curry, is a widely popular dish in the United Kingdom. The marinade used in the preparation of <strong>chicken tikka</strong> is also sometimes called tikka; it is made from a mixture of aromatic spices and yoghurt. Paneer prepared in a tandoor is also known as Paneer Tikka.</p>

1 . Slice the Chorizo into thin strips<br />
2 . Chop the onion<br />
3 . Julienne the red pepper<br />
4 . Chop the garlic<br />
5 . Seed and dice the tomato<br />
6 . Slice the spring onion</p>
<p><strong> Cooking: </strong><br />
1 . Preheat the oven to 180C<br />
2 . Heat up the water, then turn off the heat and add the saffron<br />
3 . Heat up some oil in a large pan<br />
4 . Brown the chicken pieces<br />
5 . Remove the chicken and reduce heat to medium-high<br />
6 . Add the chorizo and cook for 2 minutes<br />
7 . Reduce the heat to medium and add the onion, peppers, garlic and smoked paprika<br />
8 . Cook for 3 minutes<br />
9 . Stir in the rice and cook for a couple of minutes until the pan is dry and the rice is coated with oil<br />
10 . Pour in the saffron water and stir<br />
11 . Add the chicken<br />
12 . Bring to a simmer<br />
13 . Remove from heat and sprinkle with the tomato<br />
14 . Season with salt &amp; pepper<br />
15 . Bake in the oven for 30 minutes (or rice is tender and chicken cooked|)<br />
16 . Rest before serving<br />
17 . Garnish with spring onion</p>

		</p><p>This is a pretty cool Chicken Burger Recipe or simply for marinating your chicken. In fact I thought it so cool I raced downstairs to whip up the marinade, coat some fillets I had left over from last night and will be making a chicken salad with them for lunch a little later today.</p>
<p>Michael credits this recipe to Bill Granger, one that he was inspired to create after visiting a take away bar in Israel.</p>
<p>I always say that some of the best food one can eat will often be found in a hole in the wall.</p>
<p>PS: You&#8217;ll need to buy the tahini &amp; chilli relish, recipe not included (sort of like the batteries really)</p>

<div><strong>Method:</strong><br />
<span class="instructions"><br />
<strong> For the marinade </strong><br />
1 . Crush the garlic (or use pre made paste)<br />
2 . Grate the ginger (or use pre made paste)<br />
3 . Mix together all the spice ingredients with the olive oil, cumin, paprika (smoked if you&#8217;ve got), turmeric, caster sugar, garlic &amp; ginger.<br />
4 . Coat the chicken thighs in the paste<br />
5 . Marinade for 1 hour. If you&#8217;ll be cooking in the hour just cover, no need to refrigerate, you want to cook at room temperature.</p>
<p><strong> Cooking: </strong><br />
1 . Heat some oil in a pan<br />
2 . Cook for a few minutes each way until cooked and the juice runs clear<br />
3 . Serve on a bun with lettuce,coriander, chilli relish &amp; tahini and/or any variety of toppings</p>

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1 . Preheat the oven to 200°C<br />
2 . Fill the cavity with 3 lemon quarters, a few onion wedges, half the thyme and 5 cloves of garlic<br />
3 . Brush the skin with the sun dried tomato paste<br />
4 . Scatter the remaining lemon, thyme &amp; onion wedges around the chicken<br />
5 . Into the oven for approximately 40-60 minutes, you want about 20 minutes cooking time left<br />
6 . Chop up the basil and mix it together with the breadcrumbs<br />
7 . When you have approximately 20 minutes cooking time left remove from the oven and coat the skin with the breadcrumb &amp; basil mixture<br />
8 . The chicken will be hot so be careful when patting on the breadcrumbs and basil<br />
9 . Roast for another 20 minutes and rest for 20 minutes before serving.<br />

<span class="instructions"><br />
1	.	Allow the chicken &#038; grapes to reach room temperature<br />
2	.	Strip the leaves off the tarragon and chop them up<br />
3	.	Cut the grapes in half<br />
4	.	Chop up the shallot<br />
5	.	Mix together the shallots, chopped tarragon (keep a tablespoon back for later) and 2/3 of the grapes<br />
6	.	Insert into the chicken cavity<br />
7	.	Season the chicken with salt &#038; pepper<br />
	<br /><strong>	Roasting:	</strong><br />
1	.	Preheat the oven to 230°C<br />
2	.	Place the chicken in the lower third of the oven and roast for approximately 1 hour.<br />
3	.	Test the chicken with a skewer, if the juices run clear it is ready<br />
4	.	If not give it a little while longer, up to 10 minutes should do it<br />
5	.	Spoon out the stuffing<br />
6	.	Tip the chicken up and pour the juices into the roasting tray<br />
7	.	Leave the chicken to rest for 20 minutes and keep warm<br />
8	.	Place the roasting tray over the stove on medium heat.<br />
9	.	Pour in the wine and reduce by half, approx 5 minutes<br />
10	.	Whisk in the crème fraiche<br />
11	.	Add the stuffing and the rest of the grapes<br />
12	.	Allow to simmer on low heat for 8 minutes<br />
13	.	Add the last of the chopped tarragon<br />

1	.	Cut the chicken breasts up into bite sized chunks<br />
2	.	Zest the limes<br />
3	.	Place the chicken breasts in a bowl and squeeze over with lime juice and marinade for an hour<br />
4	.	De-seed and chop up the chilli<br />
5	.	Remove the coriander stalks	</strong><br />
6	.	Chop the spring onions up into healthy pieces<br />
7	.	When you are ready to start cooking drain the chicken and reserve the marinade<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Prepare the rice according to the packet instructions<br />
2	.	In your wok or pan add a little oil and heat it up until it is HOT<br />
3	.	Add the chicken and sauté for 3 minutes, until they are golden<br />
4	.	Add the chilli and stir fry for another minute<br />
5	.	Pour in the reserved lime marinade and half the coriander and half the spring onions<br />
6	.	Stir fry for another 1-2 minutes<br />
7	.	Serve with rice and sprinkle the remaining coriander &#038; spring onions<br />

1	.	Bring a pot of salted water to the boil<br />
2	.	Add the green beans and reduce heat, boil for approx 3 min, check packet<br />
3	.	Season the chicken livers with salt &#038; pepper and the mild curry powder<br />
4	.	Heat up a frying pan with a little oil<br />
5	.	Add the chicken livers<br />
6	.	Cook for about 3 minutes turning halfway<br />
7	.	Prepare the salad ingredients in a bowl.<br />
8	.	Serve with the chicken livers<br />

		</p><p>This is an easy chicken marinade recipe using soy and brown sugar as the two primary ingredients.</p>
<p>The recipe calls for a very high roasting heat so take note. If you are cooking fewer pieces you will be able to reduce the cooking time accordingly. The internal temperature of ready cooked chicken is 75°C.</p>
<p>It will work on a braai but be sure to keep and area of indirect heat available for the chicken. Due to the high sugar content the marinade will burn easily so on a braai you will need lower, indirect heat.</p>
<p>Best served with rice and chopped spring onion for garnish.</p>

1	.	Using a  large roasting dish pour in all the marinade ingerdients<br />
2	.	Add the chicken pieces<br />
3	.	You can cut the breasts in half for even cooking with the rest of the smaller pieces<br />
4	.	Cover and pop in the fridge for at least 12 &#8211; 24 hours<br />
5	.	Remove from the fridge an hour before cooking to reach room temperature<br />
6	.	Preheat the oven to 240°C<br />
7	.	Roast for 40 minutes , skin side up<br />
8	.	Rest for 10 minutes before serving.<br />

1	.	Lay some cling film flat on a board<br />
2	.	Place the chicken fillet on it and fold over<br />
3	.	Bash flat &#038; level with a pan or mallet<br />
4	.	Sprinkle on 1 sprig of thyme leaves<br />
5	.	Grate on some Parmesan<br />
6	.	A pinch of pepper<br />
7	.	Some Lemon zest<br />
8	.	Layer the Parma Ham over the top of the chicken covering the cheese<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Heat up a little olive oil in a pan<br />
2	.	Place the chicken in the pan, parma ham side down<br />
3	.	Cook for about 3 minutes before turning<br />
4	.	Cook for another 3 before it should be ready<br />

<div><strong>Method:</strong><br />
<span class="instructions"><br />
	<strong>	For the sticky chicken	</strong><br />
1	.	Joint the chicken if not already, about 8-10 pieces<br />
2	.	French the legs for them to cook quiker<br />
3	.	Heat up some oil in a frying pan<br />
4	.	Brown the chicken in the pan<br />
5	.	Season with salt &#038; pepper<br />
6	.	Pour in the soy sauce, sherry vinegar and a little more olive oil<br />
7	.	Reduce a little<br />
8	.	Add the lemon slices and juice<br />
9	.	Pour in a little water, about a ladle<br />
10	.	Cook for 6-7 minutes<br />
11	.	Season with thyme or lemon thyme if you can get<br />
12	.	Drizzle with a some honey<br />
13	.	Taste and season<br />
14	.	Add some chopped flat leaf parsley<br />
15	.	Reduce slowly and allow to rest<br />
	<br /><strong>	For the mash potato recipe	</strong><br />
1	.	Chop the potatoes into small pieces, the smaller they are the quicker they cook<br />
2	.	Bring to the boil in a pot of water<br />
3	.	In a pan pour the cream, milk and season with salt &#038; pepper<br />
4	.	Bring to the boil and then reduce to a paste like texture<br />
5	.	Drain and steam the potatoes off in the pot when ready<br />
6	.	Add the milk &#038; cream<br />
7	.	Mash the potatoes<br />
8	.	Add the chopped spring onions<br />
9	.	Fold them in, don&#8217;t mash as you will bruise the spring onions<br />
10	.	Add a knob of butter and mix it all together<br />

1	.	Chop the onions<br />
2	.	Crush the garlic<br />
3	.	Chop the celery<br />
4	.	Slice the red pepper<br />
5	.	Slice the leeks<br />
6	.	Slice the mushrooms<br />
7	.	Season the chicken with salt or your favourite seasoning<br />
	<br /><strong>	Cooking:	</strong><br />
1	.	Heat some oil in a a saucepan<br />
2	.	Add the onions, garlic and sauté until softened<br />
3	.	Add the celery, red pepper, leeks &#038; mushrooms<br />
4	.	Stir gently<br />
5	.	Pour in the stock, soy sauce &#038; tomatoes<br />
6	.	Bring to the boil, then reduce to a simmer<br />
7	.	Add the carrots, butter beans &#038; chicken thighs<br />
8	.	Simmer for 45 min &#8211; 1 hour<br />
9	.	Prepare the rice according to the packet instructions<br />
10	.	After an hour check to see it the chicken has cooked through<br />
11	.	Remove the chicken thighs and remove the bone (the meat should fall off)<br />
12	.	Cut into bite sized pieces and return to the pan<br />
13	.	Serve with the rice<br />

<div><strong>Method:</strong><br />
<span class="instructions"><br />
1 . Roast the peppers over a flame or in the oven<br />
2 . Place in a bowl, cover and allow to sweat for 15 minutes<br />
3 . Peel away the skin<br />
4 . Heat some oil in a pan and saute the red peppers, onion, chillies and tomatoes until soft<br />
5 . Add the garlic, sugar, paprkia, oregano and lemon juice.<br />
6 . Cook for a 2-3 more minutes<br />
7 . Marinade the spatchcocked chicken for 1 hour or overnight if possible<br />
8 . Cook on the braai or in the oven<br />

		</p><p>Arthie Moore makes an authentic Butter Chicken Recipe using Ghee and for a little extra flavour, some Tandoori Paste.</p>
<p>Butter Chicken is one of my favourite recipes and is a regular weekday meal.</p>
<p>While I normally use butter and cream cheese for mine Arthie Moore uses the traditional ghee and then a little extra butter. To bring more flavour to her recipe she uses a tandoori paste for some extra spice.</p>
<p>You can grate, blitz or finely chop the tomatoes.</p>
<p>Arthie also hands out a great tip for dealing with hot food that is burning away in your mouth, a cup of black tea!</p>

<div><strong>Method:</strong><br />

	<strong>	For the marinade	</strong><br />
1	.	Mix together the tandoori paste, ginger, garlic and a little salt &#038; pepper<br />
2	.	Marinade the chicken in the paste over night.<br />
	<br /><strong>	For the Butter Chicken	</strong><br />
1	.	Heat up some ghee and butter in a saucepan<br />
2	.	Sauté the onions and cumin<br />
3	.	Add the garam masala, turmeric powder and curry powder<br />
4	.	Cook for a 2 minutes over a low heat and then add the tomatoes<br />
5	.	Add the bay leaves, cardamom pods and cinnamon<br />
6	.	Add the chicken and its marinade<br />
7	.	Bring to the boil, then reduce to a simmer<br />
8	.	Cover and cook for 20 minutes<br />
9	.	Once done remove from the heat and add a knob of butter or some cream and stir<br />
10	.	Serve with Basmati Rice and garnish with coriander.<br />
