How to braai a whole chicken on a gas or charcoal braai

You might want to try roasting a whole chicken on a braai, it is very easy as long as you use an indirect cooking method on the braai.

Preheat the braai up to 180°C and set it up for indirect cooking over a medium heat.

With the indirect braaing method the fire is positioned on either side of the chicken with no direct heat below it. This method works well for large pieces of meat that require longer cooking times.

If you have a small braai use a braai plate to rest the chicken on while cooking.

Prepare the chicken by basting with oil and season with salt & pepper or your favourite spices.

Truss the chicken drumsticks together and fold the wing tips in behind its back.

Place the chicken breast side up on the braai on the area where their are no coals or the gas is turned off.

Braai the chicken for 1 to 1 1/2 hours with the lid on until cooked, the juices should run clear.

Allow to rest for 15-20 minutes before serving.
