Green Beans Braai Recipe with Vitamin C

Jamie Purviance has some great tips for cooking vegetables on a braai, in the example he makes a green beans braai recipe using Vitamin C to help make the beans look great on the plate.

He got the idea from a chef friend of his who uses Vitamin C when he makes pesto to keep the basil bright green.

Vitamin C is an anti-oxidant which prevents things from browning which is what will normally happen when you cook green beans.

You can try this trick with a variety of green braai sides or even cooking in the kitchen.

Green Beans Braai Recipe | Jamie Purviance | Weber Braai

Serving: 4-6 | Prep: 15 min | Cooking: 10 min

Ingredients:
Lemon 1 zest
Extra Virgin Olive Oil 1/4 cup
Garlic 2 cloves
Chilli Flakes 1/4 teaspoon
Green Beans 500 g
Vitamin C 2 tablets
Salt

Method:

For the Lemon Oil:
1 . Gently heat (low and brief) and mix together the olive oil with lemon zest, crushed garlic, chilli flakes and a pinch of salt
2 . Crush and add the two Vitamin C tablets
3 . Mix it all together well.
4 . Coat the green beans with the oil
5 . Mix them well to get an even coating

On the braai:
1 . Use a grill pan on the braai and preheat it for 10 minutes to get it really hot
2 . Carefully place the green beans onto the grill pan and avoid the oil dripping onto the fire to prevent flare ups
3 . Cook for 5-7 minutes with the lid on turning occasionally
4 . Drizzle with a little lemon juice before serving
