Christmas Turkey Recipe with Pork Sausage Stuffing | Justine Drake,

Ingredients:

| Butter | 1/4 | cup | |
| Fennel | 1 | bulb | chopped |
| Onion | 1 | 0 | chopped |

| Pork Sausages | 250 | g | |
| Breadcrumbs | 1 | cup | |
| Dried Cranberries | 1/2 | cup | |
| Pistachio Nuts | 200 | g | |
| Fennel Seeds | 1 | tablespoon | |
| Bay Leaves | 2 | few | chopped |
| Rosemary | 1 | sprigs | chopped |
| Thyme | 2 | sprigs | chopped |
| Salt & Pepper | |||
| For the Gravy | |||
| Chicken Stock | 1 1/2 | cups | |
| Cornflour | 1 | tablespoon | |
| For Roasting | |||
| Butter | 1/2 | cup | |
| Onion | 2 | sliced | |
| Bay Leaves | 2 | ||
| Rosemary | 2 | ||
| Thyme | 2 |
Method:
For the Stuffing
1 . Heat up some butter in a frying pan
2 . Sauté the onion, fennel and garlic
3 . Mix the remaining stuffing ingredients, remove the sausage from the casing
4 . Season with salt & pepper
5 . Season the turkey cavity and stuff with 2/3rds of the stuffing
6 . Use the remaining stuffing under the neck flap.
7 . Truss the turkey, brush with the butter and season well
For Roasting
1 . Place the sliced onions on the base of the roasting tray
2 . Place the trussed turkey on top of the onions
3 . Scatter in the herbs
4 . Pour in a little water to prevent the onions from catching
5 . Cover with foil
6 . Then into the oven and 1 hour before its ready remove the foil to brown
For the Gravy
1 . Remove the turkey and rest for 30 minutes
2 . Heat the roasting tray on the stove over a medium heat
3 . Pour in the chicken stock and bring to a simmer, de-glazing the pan
4 . Strain through a sieve and spoon the excess oil
5 . Return to the pan on a medium heat and stir in the cornflour
