The best way to braai vegetables

Jamie Purviance, author of Weber’s Way to Grill: The Step-by-Step Guide to Expert Grilling, shares some of his best tips on how to braai vegetables.

Vegetables for some reason often get ignored when it comes to the braai which is odd as like meat, they taste so much better when grilled on a braai.

Here are a few handy tips on how to braai vegetables to get you on your way.

  1. As with all food, fresh and in season is always best and highly recommended.
  2. Coat the vegetables with olive oil and season with a little salt before you put them on the braai and then occasionally while they are cooking, especially when braaing mushrooms as they tend to lose moisture quickly while cooking.
  3. Braai vegetables over a medium heat, that will be sufficient to caramelise and develop the flavour.
  4. Maximise the surface area of the vegetables when cutting and slicing, this creates a larger surface for caramelisation.
